Hi Grace, this video of yours took me back 40 years ago when as a child I watched my aunties making this noodle in Penang. Outside in their garden, a big pot of boiling water sat on a camp fire ! I am grateful to your videos as they trigger off memories of my nyonya upbringing and the many dishes my mum and tua ee ( eldest aunt, sister to my mum) cooked! so long ago...
Exactly my problem! I haven't been able to find Laksa noodles even in the Asian supermarkets over here. Thanks so much for the recipe! I'll just have to track down one of those noodle molds for myself. :o)
moonbladem if you can't find one, you can put it in a zipper bag, close it and make a hole at one of the tip. Adjust the hole with the thickness of the noodle you want. hope this help.
Thanks heaps, I don't have a cookie press either so this is a perfect idea for me. Cheers :D I guess a pastry chef's piping bag and nozzle would also work. Your idea also means Long noodles which I love.
This is so close to what I want to make. But, I need it to be wheat free. Will this work without the all purpose flour? Or is there a wheat free ingredient that can be a substitute? I've considered trying to make just rice noodles but it seems so difficult based on the instructions I've found.
Hi, my kids are gluten intolerant, will it make a lot of difference if I omit the all purpose flour? Should I increase starch quantity in this case? Thanks in advance!
Late reply but here's a recipe for you. 200 grams of rice flour 400 grams of water 20 grams of potato starch or corn starch Pinches of salt 1 tablespoon of cooking oil Additional cooking oil for brushing the cooked hor fun

While there are two types of rice flour, the 糯米粉(sticky rice flour) and the 粘米粉(long grain rice flour). Could you specify which kind please? I believe it is the long grain flour though.
粘米粉(long grain rice flour) is used for making this noodle, not the 糯米粉(sticky rice flour) . 糯米粉(sticky rice flour) is usually found in rice cake, dumpling, Japanese mochi, Korean tteokbokki.

You could use cake flour instead of the all purpose. It has lower levels of gluten and is widely available in the west.
