  • Simple spicy stir fried rice noodles recipe for breakfast, lunch or even dinner

    Every morning, Malaysians rushed to grab breakfast at their local bakeries or even at Mamak. Even more often, you will see groups of people gathering to buy breakfast from road side stalls. Besides Nasi Lemak, I especially enjoy having a pack of 'Mee Siam Goreng' or Stir Fried Spicy Vermicelli Noodles. In Malaysia, you will be able to find several versions of 'Mee Siam' and 'Mee Siam Goreng' is simply the faster and easier recipe. If you are interested in 'Mee Siam Basah' (with soup), drop your request!
    'Mee Siam Goreng' is more often sold by the Malays. Siam was the former name of Thailand. I guessed the flavours represented in this recipe are adapted from the classic taste of Thailand. Usually, tamarind is used to add a hint of sourness to the vermicelli noodles. However, I opted to use some fresh lemon juice instead.
    Spices may be blended before hand or even kept frozen until it is used. If the blended spices are frozen, it does not need to be thawed before using. Steps as such do help to save some time especially if you are in a rush. To reduce the spiciness of the dish, soak the dried chillies in warm water and remove the the seeds of the chillies along with the membranes. With some spices and fermented bean paste, a simple stir fried noodles can so flavourful and memorable!

    I save time by using whatever sambal paste I have usually packets of Gimson sauces (Curry or Nyonya) and add in pounded dried shrimp. Instead of sugar I use a tsp of leftover overly sweet marmalade. And stir fried cabbage done in advance. Fast, simple and warms the heart! I will try adding fermented beans next round. Lovely video.

    In Malaysia, u can also add raw cabbage and fried shallot to make it more crispy. I miss mak cik who sells malay food in this quarantine period!! 😭

    Aahhhh.... Thumbs up and toes up....AunT just finished cooking my Mee siam with gravy. Yes Mee siam always bring us to memory lane. And AunT prepared Mee siam because AunT likes to eat heaps of the Koo chai which is the Chinese chives. The Koo chai has a nice nutty taste. And AunT always add some fine grounded peanuts....just..just loves some nutty taste to the sourness of Mee siam...

      Although I am not Grace, I think that what you can do is add more ketchup and reduce the amount of chili peppers in the paste. Although I might be wrong, perhaps you should give it a try. I think this recipe isn't too spicy as typical Mee Siam isnt't that spicy. Best Wishes.

    I would add lemongrass and tumeric into the rempah. Lemongrass gives good aroma & tumeric colour.

    A good excuse to eat noodles for breakfast. I didn't catch the fruit that could be used instead of lemon or lime and is hard to find outside Malaysia, what is it?

      I was surprised to hear the name Kalamansi in this Video. I knewd this from the Philippines and this are the smaller green Limes there. Here in Thailand they are called Manau, and this are alle the green Limes, smaller or bigger, with the awsome Lime taste, who is not comparable with the taste of Lemon

      Bei verschiedenen Asiamärkte in Frankfurt (in der nähe von HBF und auch in der Stadt (Konstablerwache)). Man findet die Zutaten auch in anderen Städten wie Berlin, Düsseldorf und München.

    The name Mee Siam makes the people from Siam (Thailand) like me confused. :)

      As Malaysian myself, I don't know why it is called mee siam. But people said this dish is inspired by popular noodle dish from Siam. There is a famous Malay song called Nasi Goreng in the 50s that mentions about Mee siam.

      Northern Malaya ( Kedah Penang Perlis Trengganu and Kelantan ) are the Thai borders today, but some of these were part of Thailand in the earlier days ( historically ) ..maybe that helped to explain how Thai - style fried meehoon now becomes a popular dish..its simply because it tastes good, and easy to prepare.

    Is tau chu the same thing as tausi?

      Oh no, that's very different. Tausi is fermented black soybeans while taucu is made using yellow soybeans

      Nyonya Cooking do they taste similar? This recipe kind of reminds me of a spicy version of a Filipino noodle dish called pansit bihon. The only differences are that instead of dried shrimps we use the broth from boiled shrimp heads, soy sauce, and fish sauce. We don't use the chili and we don't have the taucu. But we do use fresh shrimps and fried tofu sometimes.

      To me, they taste quite different. The taste of taucu is quite distinctive. You are right, they are both fried rice vermicelli! I've tasted Pansit and if it's cooked authentically, then the taste is quite different from Mee Siam Goreng. Dried shrimps, chillies and taucu make it quite special. ;)
