People do water fast for 10 days. Zero calories. Some people do 1 meal a day. They are healthy. It's almost impossible to get even 1000 calories if you consume fruits and vegetables like our ancestors. It's the sugar, carbs and isolated fats that have ton of calories and that's what making us fat and unhealthy. So 1000 calories are plenty to stay fit and survive for a sedentary person.
