Tip: After grinding into powder, pour back out on drying sheets and dehydrate agin for a few more hours. Reason: Dehydrating only removes up to 75% of moisture. When grinding a dried product you expose areas that may still contain moister. Re-drying the powder removes the remaining moisture which helps to prevent clumping.

I think i remember reading sweet potato starch/flour is used in some places as part of the batter for fried chicken/whatever and is nice and crisp, not sure how thats made and how different it is from this though, and ive never tried it myself.

I think you probably could! Might just take a bit longer to dehydrate but I’ve seen it done with slices of the potato just left in the sun 😊

Yes it would!! Just spread the potato thinly on parchment or a silpat on top of a baking tray 😊
