This recipe is so good I know what I did wrong, I didn’t cook the custard enough, I returned it to the heat then chilled it again and it worked, putting this as my filling for my birthday cake today
Quenelle = two spoons Rocher = One spoon quenelle The only way to learn is to practice a lot and always use hot water on the spoon before using it. Try with soft(ish) ice cream

Looks great, tried it at home. Had issues with the praline crystalizing or the almons not cooked enough. Then made the cremeuxe, the whole was liquidy and not thick like in the video...
In my experience, yes, but you should probably leave out the salt, since it's used to negate the bitterness of the dark chocolate and deepen the sweetness, and if you use it with the white it will get overwhelmingly sweet
i tried this recipe and it turned out runny. put it back on stove, cook it on low heat while stirring until it reached the same consistency as in the video. hope it helps! 😁
The chcocolate turned out a bit too runny here. Possibly not cooking the custard long enough? But I mean it’s chocolate mixed with cream and sugar so how could it taste bad :D The praline and compote 👌👌
