1 tomato chopped
1/2 small onion chopped
1 tbsp minced garlic
2 scallions chopped
2 tsp annatto powder
few dashes of soy sauce
1 tsp AP seasoning
1 tsp Complete seasoning
1 tsp ginger
1/2 tsp salt
1/4 tsp black pepper
3 tbsp green seasoning

Much gratitude Natasha. Great tips . For years I have been making two basic errors. 1. Browning the sugar with oil. 2.Stirring the chicken into the browning when it should first sit for a couple of minutes to caramelize.

Well true but the oil really gives it a nice taste..the key isto use very little

Lovely, and nothing wrong with golden ray. If you don't like it don't use it. I use it for all my stews, peas, stem fish etc. Great job btw!!

I love Golden Ray. Never tried it in my Stew Chicken only my Pelau but I will try when I make it...tnxx for sharing
I have added the meat when doing a stew both at when the sugar is golden brown and also when it turns black. IMO waiting until the sugar is black to add the meat does indeed leave a bitter taste in the stew.

I never tried stewing chicken without oil. I will try and see how it works.

Tou can make your own
Big lead thyme
Chive
Fine leaf thyme
Pementoes
Garlic
Blend it all up with vinegar or plane water and add some salt to flavour and preserve it
How do you guys prevent your stew from being too sweet??
Dont use too much sugar for browning, add more salt or even bbq sauce to balance out the flavor

Sometimes it ends up too sweet if you didnt let the sugar caramelize enough.

Hey. Golden ray is bad for you. I use french maid (sometimes).I add a little ketchup just before I added the chicken to the pot and a little ground geera when it's almost done.😊

You were doing great until the Golden Ray, a heart attack ingredient, also a few sprigs of Fine Thyme.
Darking the sugar so much makes the stew taste bitter
it tastes really good as it wasn't over brown.
