I'm planning to make a vanilla sauce foam. So do I start with the water with the use of the emulsifier? Then, I add the sugar and vanilla extract as well?
Heres what you do . Heavy cream bring it to a boil add Vanilla bean , Star anise, I would reccomend lavander all together. Bring to boil add Versawhip. Lecithin will give it a funny taste you could add lecithin if you want. If you add sugar I would recommend using Sucro to create the foam. It works better.
