    I used to think this was silly, but having done a bunch of tasting menus over the past few years, I get it now. After 8+ courses, you don't really want to finish a meal off with a super heavy dessert, because you're practically stuffed to the brim already. And that's when a granita + foam is really nice. You get a pop of clean flavors served elegantly, and you don't feel like you're gonna die from having just one more bite.
    And many of those tasting menus actually cost less than the price that some people here have jokingly said this dish would cost.

    Why are so many people hating this? This is supposed to be a dish for tasting, not to be filled. Eating food like this is for the experience. It’s obvious that the people in this comment section obviously don’t have the appreciation for delicate dishes like this. Is it so hard to understand that you still eat a lot in restaurants serving stuff like this, because you get served more than 5/6 dishes?

    People getting angry about this in the comments for some reason??? LOL. No one is 1) forcing you to watch this video, nor eat this dish. What about art??? if someone painted a painting that another person did not find appealing, would it be okay then to just say it's a "waste of money", or a "stupid idea"? Culinary arts is an art too. It's all about experimenting and trying new things, and just having fun with it. It doesn't matter if you think it's dumb, or pointless, or a waste of time and money.       But it the foam only has about 1/2 gr. carb to one gr. carb and the same for the granita part.
      For the serving size in this video.
      As someone who counts carbs myself, this is what I would go by.

    I made carrot air one time after eating half a pound of baby carrots. I didn't think of serving it in a globe over mashed tangerine, though. I just served it with a cupped hand.

      it's mostly to give other textures to a dish. I wouldn't serve much of this dish but you can easily make nice presentations to other dishes with these techniques and it just gives a different textue and look to it.

      It's a course for a 7 course meal. Some restaurants offer it from 175 and up. For the experience and story the chef gives.

      +Ronald Chieng Yes, you can keep generating foam with the immersion blender until you run our of enough juice to get into the blades. No need to add more powder.

      +Luis b According to that theory you are implying the same effect could be achieved without the soy lecitihin. What you are saying is true, about the lecithin in carrots. Simply not sufficient to support its own weight in a matrix. Adding more lecithin solves that.
