I used to think this was silly, but having done a bunch of tasting menus over the past few years, I get it now. After 8+ courses, you don't really want to finish a meal off with a super heavy dessert, because you're practically stuffed to the brim already. And that's when a granita + foam is really nice. You get a pop of clean flavors served elegantly, and you don't feel like you're gonna die from having just one more bite. And many of those tasting menus actually cost less than the price that some people here have jokingly said this dish would cost.
