- Is there anything cozier than a big bowl of French Onion Soup on a cold evening? I can’t think of anything that quite matches the warm blanket feeling of the warm rich, broth with a cheesy breaded topping at the end of the day.
Making this dish isn’t complicated, though there are many variations of it found in cookbooks around the world. I like to caramelize the onions really well. To do it right takes a long time, but be patient because it is worth it. Then I add the broth and all the flavors to get it rich and creamy. Even though there is no dairy in this dish, it can have a creamy-like texture when it’s simmered for a nice, long time.
Don’t skimp on the bread or cheese either because, honestly, I think that’s what makes the soup so outrageously awesome. It is kind of like having a full grilled cheese on the top of your soup bowl and who wouldn’t love that?! I like to make sure the bread is really crispy and the cheese is fully melted and not too watery. Then, I crack the topping with a spoon and get a bite of cheesy bread with each spoonful of broth. It’s so good! Once I saw someone make a grilled cheese and cut it up and add it to the bread like croutons, that was yummy, too.
I recommend this dish for the cooler months. I find it specifically good for the nights we come home from skiing or sledding and really need something hot. It also is fun for easy nights with friends over because it’s such a treat!

We used to have this every winter for a while there and also in our crew would be down the shore at the shore house right on the Delaware Bay where it just looks like the ocean and a 17 Mi across it was always great when we had homemade french onion soup especially when it was cooler or windy out .
Also so good to know that my grown son was making french onion soup one day with his friends and carrying on the tradition of his dad and all his friends when they would all come down to the shore house
