    A plateful of aviyal goes best with a bowlful of steaming hot rice. But making this comfort food? That goes best with a helping hand from your partner! We've split this Kerala Style Vegetable Avial recipe so you and your special one can cook up a storm together and clean up after. Put in half the work and double the love when this classic dish goes from being made-by-you to made-by-two. Yum!*
    Cooking time with better half: 30 mins
    Chef 1:
    Ingredients:
    ¼ Elephant yam
    ¼ Ash gourd
    1 carrot
    1 raw banana
    1 long green brinjal
    1 drumstick
    Grated coconut
    Green chillies
    Ginger
    Cumin seeds
    Procedure:
    Chef 1, you’re in charge of the prep! First off, chop up all the veggies mentioned above into thick bite-sized pieces. You will need to peel some of the veggies, like drumsticks and the banana.
    Next up, we’ll be working on the coconut paste! In a mixer, take some grated coconut, green chillies, ginger, cumin seeds. Mix them with a spoon.
    Now, grind this mixture to a coarse paste. Prep is done! Time to go help Chef 2 in bringing the dish together.
    Chef 2:
    Ingredients:
    Oil
    Mustard seeds
    Red chillies
    Curry leaves
    Salt
    Turmeric
    Coconut oil
    Whisked curd
    Procedure:
    While Chef 1 preps, you’ll be cooking! Heat some oil in a pot (preferably earthen but a normal pot works as well) and add some mustard seeds, red chillies and curry leaves.
    Next, add the veggies chopped up by Chef 1. Mix it well and season with salt and turmeric.
    Add some water and let all of it cook with the lid on until it’s 50% done.
    Next, add the coconut paste made by Chef 1 and let it cook until the veggies are done.
    Drizzle some coconut oil on top and add whisked curd. Mix and turn the heat off. Your aviyal is ready to be served with some steaming rice!

    I tried it.. it was tasty.. the only change I made was added garlic after 50% of cooking.. small piece of ginger & tadka didn't spoil the Malabar taste.. thank you for your effort and recipe..Keep up 😇

    We'll not temper in avial and we'll not use ginger in avial
    Cumin seeds n green chillies are commonly added here(south)

    Good vedio and nice presentation.but a small suggestion in Malabar normally we won't use ginger in aviyal..instead we will use bitter gourd and Kovakka

    But Mustard and Red chilli are never put in Traditional Avial.

    Authentic Malabar avial does not have mustard ginger and cummin .Also bitter gourd is an important item and so also curd.pl do not use the term Malabar avial .This will be misinterpreted
