Let's make something healthy, delicious, and a little salty today. It's a delicious Korean side dish, meant to be eaten with rice and other side dishes.
Have you ever heard of jangtteok (장떡)? They're pancakes seasoned with Korean jang like ganjang (soy sauce), doenjang (soybean paste), or gochujang (hot pepper paste). They make great side dishes for rice and are a popular choice in Korean lunchboxes. I use kale in this recipe but you can use chopped Asian chives, perilla leaves, or green chili peppers. And my version is vegetarian, but you could also add some chopped seafood like shrimp, squid, or clams.
It's a very versatile Korean dish, and deliciously savory, earthy, hot, and crispy! If you make this jangtteok, or experiment on your own, be sure to send me a photo and let me know about it! I'd love to see your jangtteok!

Kale is very deeply rooted in my life. I grew up with eating Kale but only in one way. I'm from Germany and we cook it so it becomes mushy and soft. We add potatos, bacon cubes and usually serve it with a special sausage. It's so yummy. But I will try to cook those pancakes :D Thank you for all of your great work.

I watched this video yesterday, and made my own variant today. I grow kale, so I had plenty. I tossed two eggs into the batter, made a small batch of chile paste (mild, sweet/salty, and a prominent garlic and yellow onion taste), omitted the soybean paste and peppers, and added soy sauce and kosher to make up for the lack of doenjang. I wish I added chopped cayenne to increase the spiciness, but my peppers aren't ready to be picked just yet.
No matter-- It's delicious and filling. Since I doubled your recipe, I have plenty of left-over batter for tomorrow.
