  • Korean mung bean pancakes, called bindaetteok, are a delicious, savory, irresistible meal in themselves. Packed with ingredients: ground mung beans, rice, kimchi, pork, vegetables, egg, and full of seasonings, they are hearty and unforgettable.
I make the pancakes in big batches and keep the leftovers in the freezer, wrapping them individually in plastic wrap and then putting the wrapped pancakes into a zipper-lock bag. Whenever I want one or two as a quick meal, I thaw them out and pan fry them with a few drops of vegetable oil.

My daughter gave me your cookbook on Mother's Day, it was the best gift ever! Who knew I loved Korean food so much! Thank you for opening a whole new world! I even went to my 1st Korean BBQ dinner while visiting in Philadelphia! It was AMAZING! You make me eager to try making my own doenjang and rice wine! I already make my soymilk now! (And yum! Thank you so much for this recipe and I love your channel. My mother passed away two years ago. She was Korean (I'm half Korean; grew up in America), and one thing I always regretted was never learning how to make Korean food. These pancakes are my favorite! My mother would make them with seafood, shrimp usually (maybe scallops or squid?). My wife loves Korean food too, and we're going to be trying all of your recipes. I see so many of my favorites here: japchae, jajang myung, samgyeopsal, etc. My brother and I are going to try and make jjampong for Christmas dinner this year using your recipe. Portabella or white mushrooms good too. I often use fried tofu or azuki beans to relpace pork
The mung beans, sprouts & fern are full of protein so mushrooms adds a little protein & plenty of umami.

Thanks for your interesting recipe. In South India, we have a very similar dish. It is called Pesarattu, or in my native district, pasi paruppu dosai . It is made with green gram or roasted and peeled green gram (mung beans) and rice flour (or rice). The beans (and rice) are soaked. Then, after a few hours of soaking, the water is drained. This is then ground to a batter along with some ginger, green chillies, coriander (cilantro), chopped onion. Once the batter is done, before starting to make the pancake, some more chopped coriander and chopped onion (of course salt as well) are added. The pancakes are always served with a side dish, which provides a nutritional balance. In many places, it is served with coconut chutney or , I like it with coriander (cilantro) coconut chutney. In some places, it's served with another dish called Uppuma.

Because of the "shelter in place" orders, I've been going out for groceries once every 1.5 - 2 weeks. So I used Maangchi's mung bean base recipe (soaked mung beans, sweet rice, eggs, garlic, sesame oil, salt to taste), and only added fresh mung sprouts and aged kimchi for the mix-ins.
In place of water to blend the soaked beans/rice, I substituted kimchi liquid to add extra flavor. Adjusted the salt to taste since kimchi liquid is already fairly salty.
Turned out wonderfully! Oh, and I tripled everything because I needed more bindaetteok. Will make as written (minus the meat) once the world isn't as crazy.
You are a treasure, Maangchi! ❤️

I love that I’m learning lots of things at once, which is the best thing about watching some thing instead of just reading it. I’m learning about washing and preparing the vegetables, knife skills, techniques for handling the ingredients and stirring them, cooking rice, etc. you even talk about buying the ingredients, show the packaging, talk about sweating ingredients first with salt Dash when I know the reason why we do things, it makes it easier to understand and remember. This is how we learned as children - we watched and imitated, and we’re wired for that to work. This is a total educational experience, and so easy to absorb!

Maangchi, I finally got up the courage to cook this dish. It was soooooo delicious and took me to a happy place from my childhood. The bindaettoek that I have bought from my local Korean grocers have been sub par and disappointing but this was superb. I will always make this recipe whenever I want to eat this and never be tempted again to waste my money buying the sub par version . Update: Finally got around to making these! They turned out great! It was tough to get the mung beans ground into a paste, because I don't have a food processor, but I managed to make it work in a blender in batches. Other than that the recipe was pretty easy. I made this recipe for mung bean pancakes this weekend, and my family really loved them. This is four in a row. Your recipes do not disappoint. This one is a little different than some others that I have seen/read in that it adds 고사리(fernbrake), 찹쌀 (sweet rice) AND 숙주나물 (mung bean sprouts). I knew I had to try it because my absolute favorite next to kimchi is 고사리 나물. There is some amount of extra planning to soak overnight but completely worth it. I also used no oil on a few, and they were still crispy on the outside and delicious. I made extras and froze them. I can’t wait to eat them throughout the week as a healthy treat for myself! I like that these are gluten- free and can be made vegetarian if you take out the pork. Good to have options especially because people have different dietary needs and preferences. Thank you for sharing this recipe!

I made this tonight and it was amazing with the dipping sauce! I actually enjoyed the entire process, soaking the beans, cleaning the skins off, boiling and soaking the gosari. It just seemed to make them more special because of all the care in the preparation! I froze some to eat later, following your instruction! Thank you again for making it so enjoyable learning how to cook Korean food!!

It's cool seeing the same ingredients used in other Asian foods to make yummy food! We use the mungbeans to make something called "dao sua" which is a soup dessert in South East Asia, and the glutinous rice to make "Pulo Hitam", black glutinous rice soup dessert, too!
