    I learned many years back (around 50 years ago) in domestic science..the secret of pastry making "Cold while making, Hot while baking".. I've never forgotten.

    Just a clarification, if I'm going to use it tomorrow, should I keep it in the freezer until the time I need to use it? Then I'll put it in the refrigerator 30 mins before I use it to thaw it? Then I can unfold/flatten it and use it right away? Is it alright to use non-european butter? Sorry for asking so many questions, I need to use this for school so I'm a little nervous 😓😓

      Hey, you can keep it in a fridge for several days. Otherwise I would freeze it and thaw in the fridge until ready to use. I would highly recommend good quality butter for this recipe. Enjoy

      @@momsdish thank you yes I see you folded the dough 3 times thats called a letter fold in the video then next you refrigerate the dough ..ok...how many turns do you do ?...After each "Turn" you roll it out and fold the dough 3 times....How many "Turns" do you do ? Or how many times do you roll out the dough and then fold it ?

    The closest I ever baked something was a store bought brownie box. I love croissants so I tried this. OMG! You made a baker out of me lol! Gave some to family to try and I was asked what brand of pastry dough I bought. I am just so proud of myself and thanks to you! New subscriber here.

    So, if the recipe calls for those precut puff pastry squares, can you just unfold and cut what you are making here? Since it's an individual square, do you still need to do all those folds? Can you just roll it out the first time and cut it up?

    THAT IS NOT PUFF PASTRY IT IS FLAKY PASTRY. Present it at a bake competition or show it to a person that has had real puff pastry and you will be laughed out of the room.

    I was so worried about this pastry because it had a lot of grease cooking out of it from the butter. My hubby tried it and was so happy! He came and gave me a kiss and said it was so good! Thank you so much! I thought puff pastry was out of reach for me, but what do you know, It was so easy!

      I love Kerrygold butter. You can try freezing the butter for a little bit before using it.

      It get sticky when butter melts. I would pop it in a fridge, and when its cold, you can continue working on it.

    I live in Vietnam where its not easy to find puff pastry and because of my fibromyalgia i cant do all the work that goes into folding the puff pastry a thousand times!!! So i just never made it even though i wanted to make something for kids. This is the easiest recipe i have found so far and im so excited to try it!!! Im trying it this weekend. Im so excited!!!

      @@momsdish I've done like that, but it's looks like your recipe has just half of necessary flour, because it was puddle of butter in the backing tray. Then I added some flour and it was much better and pastry was still puffy. I would say it need to be about 400 grams flour for 250 grams butter.

    Dang it! I assumed you used one stick of butter. When you got to the part that said, it might look like you have more butter than flour, I knew I was wrong!😂 I shredded my 2nd stick and put it in the freezer hoping it'll freeze faster that way. Fingers crossed!

      Hey dear, here are the ingredients.
      - 2 cup Flour
      - 1 tsp Salt
      - 250 g Butter frozen
      - 2/3 cup Water ice cold
      So it more more than one stick of butter. Its actually slightly more than two. Hope it works out for you. You dont need to freeze it, but keeping it in a fridge is very important.

      I think sausage rolls are typically made with yeast dough. If you would like them with puff pastry, sure.

    I have zero knowledge of baking. So im going to ask a silly question. What kind of flour it is? I went to store. There were so many kinds, and i'm lost. Can i use almond flour or all purpose flour made from nuts?

    I was always scared of making puff pastry. I felt that it was to much work. 25 years ago my daughter attended a chef's course and came home with this recipe. I even made Palmiers with the same puff pastry. It is the easiest way to make your own. And goodness it is yummy. Been using this recipe for 25years.

    Love your video! I made the dough I left it in the fridge overnight I don’t wanna exactly use it at this moment I would just like to freeze it and have it prepared for recipes in the future. What I need to fold it how your doing it in the video before freezing it ? or just leave it in the plastic wrap and freeze it?

    Momsdish love your video I am going to try and make your puff pastry how many times do you fold and refrigerate the pastry please.

      I only refrigerate it if the butter starts melting during the baking process. Also right before baking I allow it to refrigerate.
