Just a clarification, if I'm going to use it tomorrow, should I keep it in the freezer until the time I need to use it? Then I'll put it in the refrigerator 30 mins before I use it to thaw it? Then I can unfold/flatten it and use it right away? Is it alright to use non-european butter? Sorry for asking so many questions, I need to use this for school so I'm a little nervous 😓😓
Hey, you can keep it in a fridge for several days. Otherwise I would freeze it and thaw in the fridge until ready to use. I would highly recommend good quality butter for this recipe. Enjoy

@@momsdish I've done like that, but it's looks like your recipe has just half of necessary flour, because it was puddle of butter in the backing tray. Then I added some flour and it was much better and pastry was still puffy. I would say it need to be about 400 grams flour for 250 grams butter.
Dang it! I assumed you used one stick of butter. When you got to the part that said, it might look like you have more butter than flour, I knew I was wrong!😂 I shredded my 2nd stick and put it in the freezer hoping it'll freeze faster that way. Fingers crossed!

I was always scared of making puff pastry. I felt that it was to much work. 25 years ago my daughter attended a chef's course and came home with this recipe. I even made Palmiers with the same puff pastry. It is the easiest way to make your own. And goodness it is yummy. Been using this recipe for 25years.

My went sticking 😢 probably add to much water
It get sticky when butter melts. I would pop it in a fridge, and when its cold, you can continue working on it.

I only refrigerate it if the butter starts melting during the baking process. Also right before baking I allow it to refrigerate.
