    Don’t you find that picking and washing each ramp (or whatever it is you are foraging), washing and drying it, you enter into this ritual with it? I find myself slowly working with the plants/herbs/flowers come to mean so much to me. I am great full for them in a way I am not if I just pick them from a shelf in a store. I feel this way with what I pick from my garden as well. Like each lettuce leaf, each radish, each sprig of sage becomes so meaningful. It makes me feel alive because these plants are literally sustaining me. Thank you for sharing and illuminating that feeling for me!

    I spend most of my days isolated from friends and family nowadays (you can probably guess why). Today I had your video running while I prepared my lunch and it almost felt as if we were working together, on each end, in my little kitchen. It made me feel less alone, and more at peace, so thank you.

    CINNIE ROLL TIP: May I offer a suggestion for rolling up the flat dough for your cinnamon rolls? It works really well if you roll up the dough in a floured pastry cloth (or substitute a non-fluffy tea towel) just as you would use a sushi mat to roll up your sushi. Place the dough at the long edge of the cloth/towel, tuck in the leading edge to start, and then roll it up. Voila... 😃

    I love seeing the cooking and gardening and sprouting content!
    Also, my favorite scenes are the ones where we can hear the actual sounds - like when you were washing, chopping, and prepping the wild garlic. Just so relaxing and comforting : )

      I like the sounds too... they’re kinda comforting and relaxing. We hear these same sounds everyday in our own lives but we dismiss them in our business. Here they seem so pure and melodic 💦

    I made the Risotto recipe for dinner this evening. We ate the whole pan... and there’s only two of us. No leftovers 😢... it was soooo delish!! Thank-you for this amazing recipe🙏

    Your videos are the ones I look forward to the most. If you like the cinnamon buns, I recommend trying Cardamom buns (Kardemummabullar). I first had them in Sweden a few years ago and fell in love. Now I make them often throughout the autumn and winter. I like them a lot better than cinnamon buns, even though I absolutely love cinnamon.

    A tip I use when having to shape dough in a rectangle or square is to take the round disk and shape it into a rectangle or square, makes it a little easier to roll into the desired end shape

      Yup...I’m with ya on this one Janice. I shape the dough into a rectangle by patting it with my hands (like a kid having fun with play dough), and then I roll it out into a bigger rectangle on a floured pastry cloth (what the heck, there’s no rolling pin emoji? That needs to change.). Happy cinnie buns to you (geez, no cinnie roll emoji either.) 😂🌿🌸

    Mmm now I want to make cinnamon buns with the kids over the weekend 😍 we typically make them separate from each other, with hail sugar on top instead of the icing. Also if you leave the vegan butter out for a bit so it goes soft and mix it with the sugar and cinnamon you can get a ton of that gooey goodness into your buns 🤓 perfect for a fika out in the Swedish spring sun 🥰

    Yup, cinnamon rolls are from Sweden. Called kanelbullar (=cinnamon buns) :)
    We do them without lacing. Can also be filled with cardamom instead of cinnamon. The cardamom is my favourite!

    In terms of sourdough, just do it, don't think to much. There's so much info on this and bread making, so it gets overwhelming for most people. My sourdough is now about 7 years old, I neglected it more than handful of times, but I never managed to spoil it 😉 good luck!

      I completely agree with this. I didn't read too much into it before starting, just one recipe. That made it really easy and I made some good bread. Then I started to read more books and watch more vids and had information overload. I didn't know anymore what I was supposed to do, since everyone does it slightly different. In the end I realised that I had a great prosess, and I should stop getting so much new info at once.

    Lovely video, thank you! I´ve made the minimalist baker cin rolls a few times now, they are so good! Last time I grated 2 apples and put them on the dough before rolling, that was insanely delicious! The flavors were great and it made the rolls less dry, which I loved. The Risotto looks amazing, I have to try it! Thanks!!

    Just moved to France in the middle of the country side in our new house and our whole garden is full of wild garlic and lots of other herbs and foraging treasures :) we have quite a spacious backyard and we are planning to turn into a food forest over the course of a few years , we'll take our time with it cause we are both as " green as grass" to this .
    We might also take up growing mushrooms as the previous owner was a mushroom farmer and he left us a lot of stuff xD

    it's easier to roll the dough out in a rectangle if you gently push it into a rectangular levelled out blob before rolling. I do that all the time with tarte flambee and also cinnamon rolls. Also, you can cut the end rolls a bit larger than the middle rolls and flatten them with your flat hand so they all have roughly the same size.

    Cinnamon buns are indeed a Swedish thing, but we don’t make them with icing usually and we don’t bake them together in a pan. I think that’s the American version. We bake them separate in paper like you would a muffin, and we put “pärlsocker” on top. Don’t know what it’s called in English... Some people put chopped nuts on top - that’s my personal favorite!

      Pearl Sugar?? High school sewing teacher here from 🇨🇦... a few years ago I taught the most delightful student ever. She was an exchange student from Sweden 🇸🇪. She educated me all about fika and the 7 kinds of Swedish cookies (did I get that correct?). I also learned about Swedish cinnamon buns and the special sugar that goes on top. I wondered if the translation for it was Pearl Sugar... I think I remember her mentioning that.

      @@marycharlebois6627 That’s right! If you really wanna make it right it’s should be 7 kinds of small biscuit-like cookies AND cake and some kind of buns as well, in the same sitting! But that’s quite rare nowadays. Nobody can eat that much! It’s literally pearl sugar but I wasn’t sure if it even exists in English speaking countries?

      @@juliaiderberg Yes... from this awesome Swedish exchange student I learned a lot about your country (way beyond Abba, IKEA, and Swedish hockey players). We don’t have pearl sugar here in 🇨🇦, I just remember her talking about it, and how integral it was to Swedish baking and your delicious cinnamon rolls. I’m a committed coffee drinker, and I just love the idea of fika. I think you folks are doing it up right in your country.     If you are looking to make sourdough bread, I highly recommend the recipes from The Perfect Loaf. I have been making sourdough for a couple of years and his guides and recipes are amazing and helped me learn a lot.

    The recipe is not far from the Swedish original, it's just the glaze that is typical for American cinnamon buns! And we usually put cardamom in the dough as well. In Sweden, the cardamon bun is almost as popular, it's my favorite. Just switch the cinnamon for freshly ground cardamom, try it out next time, it's wonderful

    The Cinnamon rolls are beautiful!!! I love me a roll. I usually put in nuts or nutbutter to bulk up the filling, and some kind of syrup to bind the heaps of cinnamon I add :)

I love that your videos are on Thursdays... close to the weekend when I can try out your recipes and indulge in some baking... (the cinnie rolls look uh-mazing)!! If you are looking for a baking request, I would absolutely love to see you make your Mom’s Welsh Cakes (never seen those before) and you know it... those crunchy, dry, tooth-breaking biscuits that are not really appealing until they do a collab with coffee ☕️...     Reading suggestions! Anything my Michael Greger is incredible. I've read How Not to Die (sounds weird but is sooo great), How Not to Diet, and one of the most mind-blowing was How to Survive a Pandemic. He's a doctor and a huge proponent of a whole foods plant based diet and outlines the incredible science behind the diet.

    From some of your last food preps I tried out the pickled carrots. I had left them unopened for weeks because it was my first time and I was kind of afraid they would turn out badly 😅 but I tried them just yesterday and they are amazing! 🤩

      Good one Savannah... excellent request. We always take food with us on road trips (not that we’re road tripping to anywhere right now) and full days of paddling, hiking etc. I would love some inspiration for vegan take-along food or meals. Thanks for this great suggestion 😃💜🌿🌸

    This hurts my swedish eyes 😭 but I know people eat cinnamon buns like this (just gotta accept it I guess). But google swedish cinnamon buns and you’ll know what I mean. 😁

      I am not an expert, but from what I have read... almonds are very thirsty, they require a lot of water to grow 💦. Other plant-based milks such as oat milk or soy milk require less water, and therefore are better for the planet 🌎

      Yeah, they require so much water to grow, and 80% of the world's almonds are grown in the state of California in the USA, where they frequently suffer from drought. So, it's water that they can't really afford to use on thirsty almond trees.

    You may have already done this but could you please add a warning to the videos that you go foraging in. A lot of people may not know the difference between a look alike and the right plant.
