AMERICAN CINNAMON ROLLS | Mix it up this Kanelbullensdag!

  • These are very different from Swedish cinnamon buns. These are ultra soft, squishy, HUGE and covered in a delicious cream cheese frosting.
    700 Flour
    60g Sugar
    16g Salt
    20g Fresh Yeast*
    410g Milk
    140g Butter
    Filling:
    200g (ish) Softened Butter
    100g (ish) sugar
    10g (ish) cinnamon
    Add all the ingredients except the butter, mis on a slow speed for 5 minutes
    Add the butter and mix on the faster speed until dough is shiny and elastic
    Cover in plastic and refrigerate until cold all the way through
    Roll out, slather with butter and cinnamon sugar
    Roll up
    Cut quite large
    Let rise until double in size
    Bake at 375F/180C until golden brown and the internal temp reads at about 89C/192F, it’ll take about 20-30 minutes
    *To convert from fresh yeast to instant dry yeast, multiply the fresh quantity by 0.33.
    Cream cheese frosting
    50g butter
    100g cream cheese
    150g powdered sugar
    Pinch of flake salt
    Vanilla extract
    Cream together and slather on the rolls! I like to do it while the rolls are still a bit warm so the frosting melts into them a bit

    Re: the floss, the reason I do it is it keeps the inner swirls round. Yes, you can kind of pinch it back after cutting with a knife, but they just look immaculate when I use floss.

      I used floss too, and I think it stops the squidging and makes cleaner edges. It just looks better!

    Dear Cecilia, I LIKE YOUR VIDEOS!! I really do!! But: is there a reason you skip the egg in your yeast dough? Being German, my yeast doughs contain at least one egg or - at the very least - one egg yolk in order to make the dough even smoother! So, watching your yeast-videos and watching you as an experienced and really cool baker(ess) I am asking myself: why does she omit the egg(s)? Thanks so much for a reasonable answer and warm regards from Germany!

    Wonderful video! I love to make sweet rolls & usually make them with bread dough. I make a huge batch of bread dough, make 3 loaves of bread, & one batch of sweet rolls. I make the filling with a LOT of cinnamon, a moderate amount of sugar, then sprinkle brown sugar, currants, & pecans - THEN roll it up. But I also love cardamom as well!

    Funny!! I made these today...very similar method but I added chopped walnuts and raisins. Didn't frost this time. Sweet enough for me as is, but I do love cream cheese frosting!!!

    I always make them this way, but I like to use brown sugar in the filling. (off to the kitchen)

    Using no eggs in either dough? Unusual. Also rising is different. I used to rise 1-2 hours before making the buns, and then rise burns about 20-30 min. Trying your way today.

      My grandmother is Swedish so I was always interested in the country. I got an internship in Stockholm when I was 22 and just never left haha

    Do you personally prefer the American cinnamon rolls or Swedish style cinnamon buns? I've made these ones before, and they are delicious but now I am going to make the Swedish style Cardamom buns because I think they look prettier and more stylish!

    I've been thinking about making cinnamon rolls for a while and now you pushed me over the edge. I like to add may be 1/2 tsp of lemon juice to my frosting. The added zing really enhances the whole experience.
