Hi, thank you for sharing this recipe and tips. Please could you tell me how much butter to use to bind the biscuits if I dont want to use melted chocolate as well? I have made banoffee pie before but it involved boiling the tin of condensed milk forever and had a pastry case rather than biscuit base so this seems to be both a more efficient and tastier recipe. I’d recommend 100g (1/4C plus 3tbsp) to get the perfect crust without chocolate! Hope it comes out great for you! Happy baking and let me know how it turns out 😻😻
So I tried this recipe at home and I have a few comments. The overall taste is amazing but the crust was way too crumbly (my opinion + 4 other people). Is it supposed to be like that? I would easily double the amount of butter in the crust in order to make it more solid. I had trouble serving the pie because of the crust. The toffee was perfect, nothing more to say! I reduced the quantity of crust and toffee for my tart tray because even though it is the same diameter as the one in video, mine is shallower. This type of tart tray works amazingly and I had no problem removing it. The cream of tartar is an amazing ingredient for the whipped cream. It's been more than 12 hours since I made it, and the pie spend some time outside the fridge but the whipped cream still holds! Finally, I prepared the crust and toffee the day before and kept it in the fridge (already in the tart tray). I added the bananas and whipped cream an hour before the arrival of guests. My husband said that it is a very balanced desert and the taste of each layer is blending well with the others. Good recipe in general.
I usually err on the side of caution with using too much butter for an unbaked recipe, as too much butter can result in a greasy base. That said, you could always try adding a bit more butter next time! I've found the addition of the melted chocolate helped bind everything together. We are studying your recipe and see your whipped cream topping has cream of tar tar in it. We never heard of adding cream of tar tar to whipped cream over here in America. What does it do to the whipped cream?
Cream of tartar is an acidic powder that’s a byproduct of fermented grapes! In this recipe it helps stabilise the cream so it doesn’t melt and you can whip it in advance! It also does the same for egg whites when making meringues, and it can also add chew to cookies! I think an American brand would be McCormicks, and you can usually find it hidden in the baking aisle near the baking powder and baking soda!
Yes, we use it in meringues to stabilize whites and that is totally cool about the cream. We love learning something new! You made our day!@@BlackCatKitchen
