- It’s almost Christmas! ❤️ Are you ready for a rich yet crunchy cake? I’m serious when I say rich! It’s simply made with these nutty meringue layers, creamy buttercream fillings and crunchy cashews. Oh diba? Bongga!
Ingredients:
For the Meringue
Set A:
7 egg whites
1 teaspoon cream of tartar
½ cup granulated sugar
Set B:
½ cup powdered sugar
2 tablespoons cornstarch
1 ¼ cups cashew nuts
For the frosting:
Set A:
7 egg yolks
¾ cup granulated sugar
¼ cup rum
Set B:
2 cups Lurpak Soft Unsalted Butter
1 teaspoon vanilla extract
1 teaspoon salt
Set C
1 cup cashew nuts

Chef, you made it looked so easy kaya po I got so inspired na kahit first time ko palang mag bake, I tried making it myself. I made this as a gift to my husband because it was his birthday, and Sansrival is his favorite cake.
I carefully followed your instructions, an it worked! I managed to impress not only my husband, but our guests as well. In fact, humingi pa nga po sila ng baon.

I tried making it just now, the butter is just too much and so I only used a bit and added thickened cream...high in fat pa rin! I'll try to substitute it with cream cheese next time. I think cream cheese is more delish and not so fatty compared to butter (?)

Helo po chef.. i tried po at home.. ni ref ko muna ang crispy bake meringue.. after a while po nanlambot sila.. pero kahit kanun i continued layering it with butter.. order po kasi un kaya hindi ko natikman.. pero binalik ko po sa ref overnight.. babalik po ba yun sa pgka crispy? Thankyu

Instead of rum
Water, white grape juice, pineapple juice, apple juice or apple cider, or syrup flavored with almond extract. Substitute equal amounts of liquid.
To replace rum in cocktails or cooking, try brandy, bourbon, or cognac. Each has a similar flavor profile and won't be out of place in most uses. For a non-alcoholic replacement, use rum extract or molasses combined with a little juice and almond extract.
