This couple is very inspiring! I love watching them bake! I tried this recipe several times but for the life of me, I can’t get my meringue to be thick enough! I am gonna try and try until I perfect it! Not a very cheap hobby though hahahaha thank you Kurt and Donald!

The egg whites should be separated very well - with no traces of egg yolk in it. As traces of egg yolks could prevent it from whipping up (it's easier to separate them while the eggs are still cold). 2.) Try to use newer eggs, as they whip up better. And let the separated egg whites sit at room temperature for at least 30 minutes to 1 hour, so that they come to room temperature. Egg whites whip better when they are at room temperature. 3.) Make sure the mixing bowl and beaters are completely dry, with no oily residue. Using a glass or metal bowl for whipping helps, as plastic mixing bowls often can have oily residue in them, which prevents egg whites from whipping properly. 4.) Cream of tartar helps to stabilize the egg whites, so that they whip up and gain volume. If cream of tartar is not available, you can substitute 1 tsp of cream of tartar with 2 tsp of lemon juice, or 1 tsp of white vinegar. 5.) Add the granulated sugar into the egg whites very slowly, as quickly pouring in the sugar too quickly could deflate the whipped up egg whites. Hope this helps! :)
Incredible! Very interesting, indeed. I did not realize that I can possibly make my own Red Ribbon Sans Rival - Cooking with Kurt style. I always thought that Sans Rival (one of my favorites) is the most complicated to make. Your video demo is very clear. It even highlights tips to ensure success, with tinge of dark rum flavoring. You really made it look so easy that I will venture making one this weekend.

I cannot wait to try this! My sister made one based on the Goldilocks recipe and it was OK. The last two times I have been to the Philippines we got Sans Rival from Betty’s. It was on another level entirely. I don’t know what they do differently because it looks like a basic Sans Rival in a kind of ugly box. But it was truly the best one we have had and believe me, we tried it at every known place in Manila and Quezon City! I actually emailed them and begged for the recipe, but no dice. Maybe you guys, since you are legit UA-cam chefs, could figure out what Betty’s does that elevates their Sans Rival! In the meantime, I will make this recipe! Super Salamat!

@@cookingwithkurt Okay. I made my Sans Rival yesterday and I made it because it is my daughter-in-law's favorite cake and I wanted to taste it, too. I made it now because our birthdays are about a week a part; mine was last Wednesday (Nov 6th) and hers is this coming Monday (Nov 11th). She loved it, I loved it and my son loved it, too. She said it came out exactly the way Sans Rival should be and -- this was her biggest compliment -- she said it tasted just the cakes she's gotten in Filipino bakeries. I was very flattered and pleased that it came out so well. So your recipe and instructions are SPOT ON! My only little advice is to caution people to make sure it is brown enough. Most meringue is not baked like that. And, whether it was because my oven may cook at a lower temperature or maybe because my home is always on the cool side, but it did take considerably longer than 40 minutes to get the meringue to that point of browning. I'm very familiar with meringue (I've been making meringue in various forms for 50 years) though I've never tried to brown it that much. For me, it took over an hour to brown like that; honestly, I lost track. I just kept adding 5 minutes at a time until it looked sufficiently brown. I had to. After 40 minutes it was still soft and seriously under-done. In fact, I checked this video as well as several sources to make sure that was the level of browning and that I was not over-cooking it. As it was, it came out very well. :) I also had never made French butter cream icing before but, with your instructions, it came out beautifully. And, while it is a bit of work (I don't have a standing mixer) it was so worth it. Thanks again for a great recipe.
Haven't tried making it but the way you describe the process step by step is clear and easy to follow. It looks delicious. I will try this recipe one day once i have my own food processor. Anyway, you both look great as well. Thanks for sharing. 😊

Hi po! I just tried your Sans Rival recipe for my sister's birthday cake yesterday, and it turned out great! They loved it. I'm just a beginner in baking, and this is my second time baking a cake. I had a little hard time making the meringue wafers because it didn't cook around 30-40 minutes. It took more than an hour to see a slighty golden brown look. By the way, I was a bit confused in the dark rum measurement, in the instructions it was written 2 tablespoons (89 ml). I followed the 89 ml. I think I put too much. But anyways, my sister was happy with the outcome because it was delicious!! Thank you for sharing this recipe :)
Hi Jessa, thanks for your comment! I'm glad the Sans Rival Cake turned out well for your sister's birthday :) Sometimes, depending on your oven, the meringue doesn't darken as much. But you have to be careful not to bake it in the oven for too long. Otherwise the meringue wafers will harden too much - the buttercream will not be able to soak into it, and it will be difficult to slice, and eat. At the 300 F temperature in this recipe, I would suggest no longer than 50 min baking time. Sorry about the dark rum typo in the description section! 2 tbsp is 30 mL (not 89 mL!). I made the correction now. Thank you for pointing that out! I'm glad it was still delicious and that you were happy with the outcome. Take care! :)

Incredible! Very interesting, indeed. I did not realize that I can possibly make my own Red Ribbon Sans Rival - Cooking with Kurt style. I always thought that Sans Rival (one of my favorites) is the most complicated to make. Your video demo is very clear. It even highlights tips to ensure success, with tinge of dark rum flavoring. I cannot wait to try this! My sister made one based on the Goldilocks recipe and it was OK. The last two times I have been to the Philippines we got Sans Rival from Betty’s. It was on another level entirely. I don’t know what they do differently because it looks like a basic Sans Rival in a kind of ugly box. But it was truly the best one we have had and believe me, we tried it at every known place in Manila and Quezon City! I actually emailed them and begged for the recipe, but no dice. Maybe you guys, since you are legit UA-cam chefs, could figure out what Betty’s does that elevates their Sans Rival! In the meantime, I will make this recipe! Super Salamat!

Hi Kurt your recipe is SO GOOD!!! I was hesitant at first because I’m not sure which settings to use with our oven, whether conventional w/ or w/out fan or Fan oven. I used Fan oven and it turned out really good. It’s my first time to bake and everyone loves it. Thank you so much Kurt for the recipe. By the way, you mentioned 1/4 tsp of salt on the video but in the description list it says 1/2 tsp salt.

@@cookingwithkurt Okay. I made my Sans Rival yesterday and I made it because it is my daughter-in-law's favorite cake and I wanted to taste it, too. I made it now because our birthdays are about a week a part; mine was last Wednesday (Nov 6th) and hers is this coming Monday (Nov 11th). She loved it, I loved it and my son loved it, too. She said it came out exactly the way Sans Rival should be and -- this was her biggest compliment -- she said it tasted just the cakes she's gotten in Filipino bakeries. I was very flattered and pleased that it came out so well.
So your recipe and instructions are SPOT ON!
My only little advice is to caution people to make sure it is brown enough. Most meringue is not baked like that. And, whether it was because my oven may cook at a lower temperature or maybe because my home is always on the cool side, but it did take considerably longer than 40 minutes to get the meringue to that point of browning. I'm very familiar with meringue (I've been making meringue in various forms for 50 years) though I've never tried to brown it that much. For me, it took over an hour to brown like that; honestly, I lost track. I just kept adding 5 minutes at a time until it looked sufficiently brown. I had to. After 40 minutes it was still soft and seriously under-done. In fact, I checked this video as well as several sources to make sure that was the level of browning and that I was not over-cooking it. As it was, it came out very well. :)
I also had never made French butter cream icing before but, with your instructions, it came out beautifully. And, while it is a bit of work (I don't have a standing mixer) it was so worth it. Thanks again for a great recipe.

Hi po! I just tried your Sans Rival recipe for my sister's birthday cake yesterday, and it turned out great! They loved it. I'm just a beginner in baking, and this is my second time baking a cake. I had a little hard time making the meringue wafers because it didn't cook around 30-40 minutes. It took more than an hour to see a slighty golden brown look. By the way, I was a bit confused in the dark rum measurement, in the instructions it was written 2 tablespoons (89 ml). I followed the 89 ml. I think I put too much. But anyways, my sister was happy with the outcome because it was delicious!! Thank you for sharing this recipe :)

Sometimes, depending on your oven, the meringue doesn't darken as much. But you have to be careful not to bake it in the oven for too long. Otherwise the meringue wafers will harden too much - the buttercream will not be able to soak into it, and it will be difficult to slice, and eat. At the 300 F temperature in this recipe, I would suggest no longer than 50 min baking time.
Sorry about the dark rum typo in the description section! 2 tbsp is 30 mL (not 89 mL!). I made the correction now. Thank you for pointing that out! I'm glad it was still delicious and that you were happy with the outcome. Take care! :)
