  • Today we break down a broomtail grouper from Baja. These fish grow to very large sizes and the meat is very mild and delicious. Many call it the halfway point between white seabass and alaskan halibut as far as taste and texture goes. Please subscribe for more great content.

    I didn't see him cut out the cheeks, obviously he did. I remember my first job delivering plumbing supplies to the guys in the field. The company had a job on the Boston Fish Pier. Watched a guy in amazement just whipping through those fish. He's the one who told me about fish cheeks, always remembered that

      you're right to think that, I know many customers where I work at buy the bones and fish heads, in addition grouper fish has good meat on the cheeks

    Damn the head is thrown away?? Fish head curry is amazing..the meat and succulent fats on the head is delicious..that wont go to waste here in Malaysia..

      neither in mexico,the thing here is that for people that buy processed food there's no need of using the head or other parts of the fish,but for normal everyday buyers the head is not removed the fish just gets scaled and degutted

      If u go to UMS Sabah hatchery. You could find grouper bigger than your body.

    Been in the seafood business for 40 years and working in Montauk N.Y. this is the same way I filet a grouper.

    I'd keep the filets and throw the rest to the crabs. If you want to retrieve the carcass from under a dock to make curried whatever stock of something then be my guest. Lol.

    Ive always wanted to go grouper fishing but was always too scared to because those things are biiiiiiig im honestly glad the one here is small i didnt know you could actually eat them tho i thought it was catch and release now i wanna know what they taste like and where to find them

      Young because that was very small compared to how big they usually get i thing average adult weight for one of these is well over 1000 lbs. And they are MASSIVE just enormous to the point of you could probably crawl in ones mouth and build a lil fort... ok i got off track but point is these things are huuuuuuuge

FIsh bones can be boiled with tofu, ginger, spring onion and cabbage to make fish soup. There will be no surplus stock eventually, what a waste!

    wonder if that head and frame are used at all - extremely wasteful if thrown. sufficient meat and edible parts remain to feed an adult or 2, or, 2-3 children. the rest can be stock base.

      Im from inland america by the great lakes... the weirdest ive gotten is calamari so yall are speakin some foreign language to me a few minutes ago i didnt even think people could eat these things i thought it was only catch and release for these fish
