    So I watched this video and never knew about ghee, so went to buy some and saw it was a little pricey 10 bucks for a small jar like 10 ounces 😳. So I looked quick on how to make it and it seemed simple enough so I bought 2 lbs of butter for 1.99 each so I had just under 4 bucks invested. Well went home and went through the boil down process which was interesting and fun and ended up getting a tall Mason jar FULL!!! It smells really sweet and tasty pretty good and made my kitchen smell amazing when the butter clarified. So if your on a budget definitely give it a shot it only took about half an hour maybe 40 minutes but so worth it!!!

    That looks incredible. Love the tip on using precooked potatoes. I think I'll put 4 or 5 potatoes in my instant where they take very little time to cook and then refrigerate them for breakfast the next day. Thanks again

      Definitely can microwave the taters for speed. They taste better (IMO) if you bake them for an hour at 375. Just my .02 cents. Enjoy!

    Between the two plates, hers looked better. Not saying yours looked bad. Just that hers looked better. One suggestion ingredients wise I would suggest is tomatoes. Not slicing types, use a sauce type like a Roma. They are meaty with less seeds and juice. Freshly dice and add at end. Another choice would be a grape type tomato. Just curious in half, toss onto the griddle surface for about 1 minute then place on top of dish.The tomatoes will add some great color for presentation and add a nice fresh garden flavor.       Thinking about a 50/50 mix of chorizo sausage and 80/20 ground beef.
      Toast the bun
      Use sour cream instead of mayo
      Salsa instead of ketchup
      Lettuce and avocado
      Smash the burgers then add sliced pepper jack and cheddar
      What u think.

    Just make your own ghee/clarify butter and put it up. It's shelf stable and you can heat some up and put in a squirt bottle. It's a easy process you can also do on the griddle.

      @@TheFlatTopKing it's better to use unsalted butter because the salted butter sometimes gets too salty.
      When I catch butter on a good sale I get a bunch and make a batch.

    I just bought a Blackstone the other day. I made a ribeye & it was the best steak that I have ever made. As for the potatoes… I have always just thrown them in the microwave for a few minutes before I fry them when I’m making potatoes and eggs. In south west PA we call what you are making a garbage plate! That is even what it is called on the restaurant menu.

    I store filtered bacon grease in a metal can...in the fridge. I use it .....sometimes with butter and or other oils, in cooking.......it already adds a tiny bacon flavor

      I always cook my eggs in bacon grease. I have lots of sour cream and cottage cheese containers full of it in the freezer (just like I would freeze butter). Nothing better! Right now I've got enough that I throw away the bacon grease, but I'll keep an eye on my "inventory." lol

    My approach to baked potatoes: I always, always bake extras. Cool them overnight, uncovered, in the fridge. The next day, pop them in a bread bag or something similar. The potatoes will last several days (up to a couple of weeks) if they do not sweat. Then, dice them or grate them for your favorite breakfast combination. As far as the best oil to use? Bacon grease! All the way!

    Great job we always baked our potatoes for hash browns when I worked in the local diner we always kept a pan of real butter melted on the grill and just ladled it out best way to make hash browns or American fries

    Recipe for ghee and clarified butter by chef Jean Pierre is work but make in bulk on you tube at butter prices . I'm retired ...easy for me to say! Also want to make hash browns with potatos run thru a potato ricer .will let you know result Tim

    I've done a similar thing by just nuking them in the microwave for maybe 5 minutes. Don't forget to stab them with a fork a bunch of times 😁. The time just depends on the number and size of the potatoes. Saves a lot of time rather than oven baking

      Hey im with ya. In the Navy while deployed we has to hand crack eggs. We served around 3,000 people in a single setting. As a newbie it was 1 persons job to ONLY crack eggs. After a while you start cracking eggs with both hands. If a shell dropped AAAHHHGGGG they wont notice. HHAHAHHA

      Hey Brother. I have not used bacon grease only. The first seasoning was with crisco. If i am making bacon I always make a point to season during the cook.

      Love it. I initially built one from scratch but way to heavy and bulky. This one is light and plenty of storage. Rolls easier to. I bought it from harbor freight. Home Depot sales similar things.

    I love this video! All the food looks fantastic (eggs were maybe a little overdone, no big deal). I like the idea of coating the diced (baked) potatoes in some flour (or cornstarch?) to make them even crispier. I wonder what some non-Americans would think of such delicious food. Probably turn their noses up at the amount of cheese we tend to put on everything, but I love it. I like your description of the peppers and onions cooking at the fair- almost made me smell it, although I don't have "Smell-ovision" lol Thanks for all your videos. Definitely a subscriber!!

      Thats a unfair question...I have multiple griddles and cook more than most plus all the variances...weather, what i am cooking. cleaning. temp outside. how often we film..etc...

    You can make you own ghee, i do …… but you basically boil butter until the solids fall out and the water evaporates

      I always cook on low....i have a video about flat top grill temps...does it matter and it goes over the idea of how when and why temps are not really that important

      Yes...i didnt show that..it was more about the potatoes...I do however have plenty of videos with the gravy etc..

    Does it matter if you cook the potato in the microwave ahead of time?

      Good question. My guess is no it does not matter. The only point in cooking the potato ahead of time is reducing the amount of starch. I might experiment tomorrow with that question. Do u just microwave the potatoes the whole time till tender?

    Looks delicious! You mention reserving your bacon fat and sausage fat why don't you make your own ghee?

      Good question. Not long after that i had some medical problems so I ended up loosing 50 lbs. thus i started using healthier fats. Now trust me that doesn’t mean i shy away but i just use so sparingly. That being said. Thats a good idea.

      @@TheFlatTopKing here in southeast TX we do a breakfadt skillet like this: hashbrowns with two big sausage patties then covered in white country gravy topped with shredded sharp cheddar then finaly two fried eggs on top

      Sounds good. Maybe some blackened fish with a Cajun cream sauce, or a Parmesan cheese crust. Any recommendations

      @@TheFlatTopKing Both of these sound amazing. Everybody does steak, smashburgers, breakfast, etc. Have not seen many fish cooks on griddle. Thanks to you I am switching to Camp Chef for my next purchase. Also thanks for your service one vet to another.
