Mexican Fried Rice with AWESOME Griddle Mexican Chicken from

  • This Mexican fried rice is loaded with flavor, and it's so easy to make on the griddle! Since we cooked the rice in chicken stock and salsa, this Mexican rice recipe is fantastic on its own... but then we added sauteed peppers and onions, black beans, corn, cilantro, and fire roasted tomatoes to make it even better!
    For the boneless skinless chicken thighs, we used a Mexican grilled chicken recipe from Meat Church - Marinate the chicken in a can of jalapenos with the juice overnight. Then, cook the Mexican chicken on the griddle for a super easy and flavorful chicken to use in this Mexican fried rice or any other Mexican recipes, like tacos or quesadillas.

    This looks amazing! I have made Meat Church's Mexican Chicken, and I love this idea. I make Asian Fried Rice about every other week as part of my regular rotation and your method looks great!! i always have bags of Costco bone-in, skin-on thighs, and boneless, skinless thighs in my deep freezer so I intend to make this on the next fried rice rotation. Thank you very much, and I know if Amy likes the chicken, my wife will as well. They both share a heat level (wimpy!) tolerance I believe :) Very nice work folks!

    Hello Neal and Amy. To get that same charcoal flavor, you could do a low temp smoke on your smoker and then finish the chicken on the flat top. Lumberjack has a Char/Hickory pellet that you would swear you cooked the meat on charcoal. I also follow Church BBQ, Matt has a great channel like ya'll(threw in a little Sothern there.) Give it a try. I have never thought about flat top mexican rice. That would be great with my Birria Tacos.

    Can you imagine the life those folks have with their spouses that say you two shouldn't eat after each other. Pitiful site isn't it.     Hold the gosh darn phone! I've had Chipotle tabasco but I've never seen Chipotle Cholula. Shame on me I should know about this kind of stuff. Lol definitely need to get my hands on some. That's totally awesome in regards to toasting the uncooked rice! It's definitely a must for any kind of Mexican fried rice. This honestly looks so good Neal!! I definitely am going to give this a go sometime soon.

    Mexican-Fried-Rice 🤔, you’ve struck my curiosity! I gotta say I’m definitely blown away of how that looks/came out…most impressive Brotha. I can tell by your reaction and also the 🤏🤏🤏 Pinchers of Power, those thighs came out BOMB. I’m definitely going to try the marinade, never heard of using canned jalapeños with the juice. But the proof is in the pudding as we all can see. Usually when I make Mexican rice I do use chicken bouillon, but I use the 1 with tomato (Knorr brand-caldo de tomate)

      Only thing I remember about that...long chow lines, all hands on deck, 2 days of prep plus all the other meals had to be made, and one heck of a mess on the griddle..ahahahha

    Hint: Chop the canned peppers into thirds before tossing into marinade. That way you can just toss the stem ends with seeds and cook alongside on the griddle to sanitize. Use now or save the remaining pieces to add to whatever. A lot easier to work with when not coated in chicken fat and spices and no leaving them with biologics growing on them.

    Very nice! I used canned pickled jalapenos to marinate Tri-Tip along with Carne Asada seasoning. So darned good. I can imagine what that chicken tasted like. It certainly looks delicious.

    I made this today and it was amazing! The only tweaks were to add an extra jalapeno and use my wife’s homemade Serrano based salsa for the rice (we like it spicy). Everyone absolutely loved it and I’ll be making this again!

    I did meat church chicken and it sat 24 hours in marinade and 1to 10 about 4 on spice but was good i will be trying your recipe also

    I’m definitely trying this. For me, I will save some of the pickled jalapeño and carrot, to dice and add to the rice.
    And I’ll add some goat cheese as well. Very good looking dish tho man.

    Neal, when doing any kind of Mexican style dish. Pablanos to me are always better than green bells. They really give you that SW and south Texas flavor.

      I have not had my Camp Chef in over 2 years..ahhahaha
      As far as the Blackstone..i have had 2...the last one was the new one and didnt like it...it was being outperformed over and over again by other griddles..since i only have so much room...it had to go...
