As a fellow fashion designer they didn't really explain raritys aversion in the episode well but basically there are two main routes you can take. Haute coture and fast fashion. Your sin that she could do both isn't really accurate because the speed at which fast fashion moves and dominates the fashion scene can really impact how your more personal designs sell and contribute to wastage and poor labor standards. Rarity not wanting to participate in fast fashion is nothing but a credit to her character
Plus Rarity has always been about Haute Couture. Nothing about her character would suggest she'd even remotely go for a fast fashion route. She's always been adamant about not just making each dress unique and different, but about doing it herself. This was even called out on by Applejack in S1
I think the reason rarity didn't want to keep making the same dress makes her character so much more fleshed out, she's an artist after all, and artists see the problems with the same thing done over and over
What reaaaally pushes the boundaries for me about Rarity’s boutiques is that she makes EVERY SINGLE GARMENT herself, and for three whole shops in the later seasons! Do you know how friggin long it takes to design, make the patterns, cut the fabrics, sew and finish ONE simple garment, let alone a fancy couture dress with details and draping and beading and embroidering? Way too frigging long to fill A shop and keep it stocked and up to current trends, to say nothing of THREE (even if you weren’t also busy frequently saving a nation and hanging out with friends) ALL BY YOURSELF. Fashion designers IRL rarely even sew samples themselves, they draw their designs and pass them to pattern makers, who then pass them to seamstresses to turn into samples and so on. And btw, real design drawings aren’t those pretty fantasies with really skinny ladies with fetching watercolor strokes implicating how the chiffon blows in the breeze. They are very precisely drawn, black lines on white, with no human figure in them, showing exactly where every single seam, stitching, button and shape is in exact, measurable scale. Any other kind would be useless. Anyway, I digress. My point is, in a show with dragons and magic and pastel ponies with weapons made of friendship juice, THAT is the one thing that irks me in it’s sheer scale of NO WAY THAT WOULD EVER WORK. That being said, Rarity is best pony and I love her works.

She certainly doesn’t just poof the clothes into existence. Don’t get me wrong, TK would be MASSIVELY useful when creating outfits and would certainly speed things up. BUT. Consider that magic wouldn’t speed up the designing part, which takes A LOT of time and research all by itself, especially when the stores seem to have everything from high end couture to business attire to street fashion, including accessories, for both females AND males. I would argue that alone would be too much work for one person. And that is not even taking into account clothes have to be made in different sizes, meaning you have to create several patterns of the same garment. Pattern making is it’s own occupation, BECAUSE it’s so time consuming and technical. And then there is the whole process of making the garments, and that is a whole slew of jobs that need to happen before the boutiques are stocked. So yeah, Rarity has magic, but we have computers and programs and machines that speed up the work WAY more than telekinesis would. And even in the human world, it would take a couple of designers and pattern makers, a small factory of seamstresses and a well staffed couture studio to make all the stuff in her stores.

The reason behind these "flawed designs" is actually explained later on. Rarity says that as much as her fashion line suffered, so did the princess dress, as since she had to create it over and over she started paying less and less attention to detail :D happens sometimes with fast-fashion and clothes in high demand. Take the chest-binder brand GC2B for example. Initially, their binders were high quality and considered safe. But lately, they have been recieved with loose seams, un-sewed sections and have been deemed unsafe as they cause pain when worn under 8 hours. (Binders arent meant to do that).)

To be fair about sin 32, part of Rarity's established chracter is someone who creates art, and tries to bring out the best in indiividuals by matching them with equally unique creations. While a mass-produced, one-size-fits-all design would undoubtedly be very profitable, it would also go against her design ethos. If anything she's showing integrity to her core principles rather than them selling out for maximum profit. That said, she could still licence the design to a third party manufacturer, unfortunately, there doesn't seem to be that degree of economic specialisation in Equestria.
