INGREDIENTS
●125g soft butter
●1 cup icing sugar
●2 teaspoon oil
●2 large eggs
●½ teaspoon vanilla essence
●1 ½ teaspoon baking powder
●1 ¼ cup desiccated coconut
●½ cup corn flour
●2 cups flour
TOPPINGS
●100 and 1000s sweets
●chopped peanuts
●melted white and dark chocolate
METHOD
Beat the butter and icing sugar till pale.
Add in the oil, vanilla essence, and 1 egg at a time. Beat till light and fluffy till all the eggs are combined.
Add in the coconut, baking powder and corn flour.
Add enough flour to form a soft dough that is easy to roll without sticking to your work surface.
Roll cookies into desired shapes and sizes
Make markings with a fork.
Bake at 170°C for 15 minutes.
Do not over brown the cookies. All ovens are different
Once baked, dip some in melted white chocolate and dip in either 100s&1000s or chopped peanuts, drizzle white/dark chocolate, or both on some
