For anyone watching (and using regular tomatoes) you can shave off about an hour of cooking time if you boil some water, toss the tomatoes into boiling water (till skin comes off) then throw those skinless tomatoes into a food processor. This way you don't have to wait till tomatoes are boiled down in the pan. Just cut out the tomato stem before boiling or blending.
I mean... If you want to lose a lot of the tomato flavor you can certainly do that, but at that point I'd say save even more time and use canned tomatoes...

Anyone else want to blend the sauce prior to adding the cream/cheese and basil? I like a very homogenous mixture when it comes to pasta sauce… that’s how I make my “garden” tomato sauce… I cook all these chunky veggies and ultimately blend them!

@@DeffecX I don't think so, no. You want the tomatoes to cook to continue to break down. You also want the sauce to keep simmering on the stove to meld the flavors together. Let it cook... ❣
I've made several versions of cherry pasta and no, you do not need to wait 50 minutes. Gently crushing the cherry tomatoes will help speed up the process. I use a potato masher a couple times to speed it up a little more. You can reach perfection with this dish in 20 minutes or so. See the version of Vincenzo's Plate on UA-cam. Also use Mascarpone cheese instead of cream (per Vincenzo) toward the end and you won't regret it.
There is no mention of using cream at room temperature or tempering! This is important because the cream can easily curdle!! It's a good recipe, and I added a lot of fresh basil sliced finely at the end.
Cream typically curdles on "HIGH" heat. From the looks of the vid, its added at a very low temp. It isn't something to worry about if added at low heat.
soo i managed to burn the tomatoes and realized i didnt have cream while making it, sent my brother to the store to get it, i then realized i had to cook it for more than an hour, i didnt lol, HOWEVER it still tasted so damn good, i will deffinately cook it again
