because no one eats them like that. typically in asia you eat a little with very bland rice like congee etc., so the super salty egg actually pairs well with super bland foods so long as you only use a litte.
Century eggs are good with spicy coconut vinegar, tomatoes, onion, garlic, and some chilies. Its not bad when you make something out of them. Its like salted egg.

When I eat these babies I make a rice porridge with a from scratch meat stock. (My go-to is chicken. I also add a premade chicken stock for more flavor.) Cut the egg in small strips, place the sliced egg evenly around the bowl of savory rice porridge, and put chopped green onion and ground white pepper on top. Way more palatable than eating it like a regular hard boiled egg. 😂
