Whenever I'm just cooking for myself or maybe one other person, I normally use a skillet that fits the fillet with just enough room to spare so there's no concern about spillage. Or, if for some reason that's not an option, I just chop up the fillet to make nuggets. Saves even more than just using a skillet, though it does have the cost that you have to be a bit more patient since you can really only do one at a time.

I wish you would have said how hot your oil was! What setting was the burner on? I'm not an experienced cook so I need to know those things! But thanks for the video. Everything else was a help but I'll have to ask someone else how hot to make my oil.
The goal in frying catfish is to have an even batter/outer crust. When the catfish is served it should look perfect! It should not be served without blemishes. Sorry to say it but your catfish, as a finished product, has blemishes. Pay attention to that the next time, otherwise it looks delicious!
yeah you definitely have to be careful, for new cooks I would say yes but for me I've been cooking so long I guess I never thought of that or even scared that would happen.

You have to get tongs, no way around it. To big of a risk of a big splash of hot grease using a spatula
