I personally feel like the less he talks, the more scary he is. And the more he talked, the more goofy he became.
Keep in mind, Hulk is a manifestation of Banner’s childhood trauma. Hulk absorbed and became the pain and frustration from the abuse so Banner wouldn’t suffer. But because Banner was so young, Hulk also assimilated the mannerisms of child. Hence why his grammar is so inarticulate and “goofy” sounding.

Hulk 2003 was a fine interpretation of the green guy himself but he looks relatively cartoon-y and acts like a giant baby most of the time. However, he works as the manifestation of Bruce Banner's childhood trauma. He has impressive moments too
Hulk 2008 was a slightly better interpretation as he stayed to comic Hulk's true size and he appears menacing. I like the details of his muscles and veins. I can see inspiration for this big guy. His Bruce Banner is overall charming in his own right. But there's nothing of high-highs that makes me love this green guy more than I should be.
I liked Hulk in both the Avengers Movies and in Ragnarok. He worked as a fun side character and he was my favourite character of the Avengers. Bruce Banner works with this kind of Hulk because of better resemblance. A guy who can't live a normal life because of this other guy inside off him is really interesting in these kind of movies even if its not the main focus. When he works for the Avengers, its a treat to watch. He has a lot of epic moments and sometime funny ones.
Then his professor Hulk counterpart was pretty dragged out. I know its based on the comics, but the original Hulk is a far more interesting thing to watch. Professor Hulk was fine in Endgame but in She Hulk, he kind of drags a bit. Hulk in films has become pretty dragged out.

The Hulk was born out of Banner's childhood trauma and represed anger and memories, The Hulk acts like a child because he is one, and he usually matures when Banner and Hulk start having an understanding of each other.

Lou ferrigino the one who acted as hulk in the 1978 tv series show and became hulks voice actor after that
