So glad you made this video. I have made my regular bread (honey oatmeal ) for the rest of my family in a bread machine each week since 2006. I can't wait to try this on the gluten free setting. Just a note. I always take the paddle out after the machine has finished kneading the dough, this way you are left with just a small hole in the bottom of the loaf the size of the spindle. I just lift the ball of dough out, remove the paddle, then return dough to pan, close the lid and let it rise and bake.
I have an older bread machine, so I tried the recipe using the quick bread setting. I could not believe how well it worked. This is the best tasting keto bread I have ever made!!!! Thank you so much, Victoria, for blessing us with are your experimenting and hard work! Your flour blends are truly amazing.
Victoria, this is delish. This is my first time making the bread with your flour. It is soft and moist, not dense like other keto breads. I made it on the Homemade setting but I want to experiment with my gluten free setting. I also want to try it out with the NSKF2 made with psyllium and guar. This is flavorful and will safe me some money. Thank you!!

I’m wondering if I can use the dried egg whites from Sport Protein for this recipe. Their label says that 1 T. is 14 grams. Has anyone used this egg white powder for the recipe?
Funny, I was just looking for a bread machine recipe on your website yesterday!! My bread machine is very old and not capable of customizing the cycles and it does NOT have a gluten free setting, so I use the quick bread setting, and that works for all my gluten free recipes.😊
My bread machine is ancient too! Not sure if it even raises twice but it has a light medium and dark setting so I will go with the light and hopefully it will raise. I did not know that before this video and had already tried it in my bread machine. It did not raise or if it did it did not the second time because it was a very small loaf and quite dense. But it was quite tasty. If this one doesn't turn out I will just let it knead in there because I don't have a dough mixer and then raise it in a regular loaf pan and bake in my oven.
Made it again without the baking powder and it was just as good. I also added a couple of 2 T butter powder. Next I will cut the yeast down to 2 t to see how that changes it.

So excited for this recipe, thanks so much! Wondering if you have thoughts or experience using glucomannan powder (a soluble fiber also known as konjac root) in place of inulin? I've read it has the same health benefits as inulin without causing as much tummy gas. Really appreciate you, Victoria!

Hi, Victoria. I told you in my last comment that I would be experiment. Well, I did your bread recipe with the VKF instead of the NSKF 2.0 . I also use my machine's gluten free course. OMG!!! This flour made such an awesome bread. The other was fabulous but the psyllium and xanthan made the perfect loaf. It was drier and had a real bread smell. Thank you so so much. By the way I have a little of the NSKF 2.0 can I just throw it in with the new batch of VKF? Will that mess up the ratio. I'm so excited.
After my bread finish the kneed I remove the dough take out the paddle put the dough back in let it rise and bake there will be only a little hole in the bottom

I tried taking the paddle out and my machine started the whole cycle again. So it doesn't work for every machine sadly.

@deetaylor6869 it's a Russle Hobbs with all the usual programs it's three years old.. But take the paddle out and it will start the program from the start, I was gutted.

Hi, I'm making this recipe as I'm writing. I have a question though. What does the consistency of the dough look and feel like after the knead cycle? Usually with regular bread you would add a bit more flour as it kneads if the dough is too moist. However, I'm not sure what this dough is supposed to be like. Thanks for your help

Looks like her machine has 1.5 lbs and 2 lbs. She didn't specify the size loaf. Kind of wonder whether to double the ingredients and try for a 3 lb or just assume she uses 2 lb. edit: fairly confident saying she made 1.5 lb loaf

AMAZING!! It works great!! I have been Keto for 27 years and this is an amazing find. I bought the bread machine you used and followed your instructions explicitly on the custom setting and the bread came out PERFECT and DELICIOUS TASTING with PERFECT TEXTURE. Wow!!! I have tried so many in past years and your bread flour is the best. My search is over.
Right before the baking cycle I took out the little kneading paddle at the bottom of the bread machine bowl (just take a spatula and move the dough aside and pull the paddle out with the paddle tool) and the bread visually looks aesthetically beautiful. You are right, after baking and the bread cools, I sliced the bread and let it sit out 45 minutes so that it was no longer moist.
I have a Bambussi Collection bread slicer for homemade bread (beautifully made from wood & adjustible) and the bread comes out perfectly sliced in seconds. (From Amazon).

Oh Victoria, Victoria, Victoria, giiiiirlll, this bread is really good. So good that my nonketo family members had no idea. I did not have a bread machine so I used this recipe and my einkorn sourdough discard and made a delicious loaf of bread using your einkorn flour recipe. It had a slight tang to it but that is more to my liking and it is perfect. After mixing in my stand mixer I poured it into a large parchment lined bread pan and let it raise for 20 minutes. Of course then I forgot about the time and actually it styed in my warm oven for 40 so it ran over a bit :). Once I cleaned up the spill I baked it for 30 minutes at 350 and just like that I had a delicious maybe not super pretty loaf of amazing bread. Next time I will set the timer for 20 minutes during the raise time so it won't overflow. My hubby thought it reminded him of biscuits so I thought it might be worth pouring the batter into muffin tins like drop biscuits and try that one out. I need to post a picture of it on the facebook group page.

I am a little confused. Is the New Standard 2.0 the same as the perfected keto flour?
Will it taste like there is too much baking powder? Some of the other bread type recipes taste bitter to me like there is too much baking powder. I had put my machine up because as a diabetic I had to stop eating bread. Im so excited to try this recipe

I have coworkers who have celiac disease so it's better not to risk using einkorn in anything I intend to share with them. But it's good to know it's an option.
Right 👍🏼 einkorn isn’t good for those with celiac. So my new standard keto flour would be perfect that’s what I used here
@@victoriasketokitchen I would suggest just cautioning viewers that it's safest not to use einkorn if someone with celiac or an actual allergy might be eating it. My coworkers can't risk partaking in company potlucks because they can't risk it, which is why I like to share things with them. 🙂My adult daughter ended up in the hospital with an allergic reaction to coconut when a group giving out hot chocolate swore up and down there was no coconut in the mix they used. It's why I love finding Keto recipes or products that don't have coconut or any wheat gluten in. Less thinking if I can/can't offer something to people.

@@patzumach3425 You have my sympathies. It's a royal challenge avoiding it, they put it in so much stuff! My daughter got really good at finding the word "coconut" in ingredient labels...and finding some of the it-is-coconut-but-using-different-word. Soaps and makeup are the worst.

All you need to do is knead the dough by hand, or in a stand mixer if you have one. Once that is done, go ahead and place the dough in your prepared pan and let it rise in a warm place, then place it in your oven to bake.
It's the same concept as a regular bread, except you'll only get one rise, so don't raise it in a bowl and then transfer it to your pan. The movement will deflate it and it won't rise again.

When you measure out your flours per cup, is it a packed cup or spooned cup ? I know when measuring almond flour by the cup you don’t want it packed, but spooned in and leveled off
I weigh it in grams. But if u can’t, Not packed

@@caroldees9075I purchased a Zojriudhi bread machine like Diedre uses in her keto bread video. I absolutely love it because the 2 mixing paddles are at the bottom of the loaf so that you have a beautiful loaf on top. It also makes a 2 pound loaf. It can also be used for making cakes and jelly.❤️

Did you use actual 3 cups...or in grams with this recipe? I used grams, and it just was too wet...I add more of the flour until it looked better.

I'm thankful to the Lord I found you online. I have many of the same health issues and like you, have been on and off keto & GF most of my life. There are times I have gone off (some with excuse, some without a good one) but I always come back to the diet that helps me get well. You are a real blessing because I have gotten tired of the same boring foods and was having problems talking myself into changing my diet again. This now seems like a good adventure to me again. After the knead cycle should the dough be like a classic bread dough? Mine is the consistency of thick pudding? Is this normal?

I was raised on good homemade bread and I miss the soft fluffy texture of bread.
I have a great deal of the 2.0 mix but was wondering if I split it with half vital wheat gluten and half 2.0 will the ingredients be compatible?
I don’t know for sure I don’t like vital wheat gluten but most recipes use at least 40% vital wheat

Good morning Victoria ☀️. I made your bread yesterday with the bamboo/almond flour but I got a hard delicious brick. I’ve got a brand new elite gourmet with a “gluten free “ setting. Can’t find the exact procedure steps🤷🏻♀️, so I’m not sure what happened 😢

Today i preformed what i think is a pretty good challenge for the new 2.0 flour (AF). I made a Dutch baby. Victoria's flour absolutely rose to the challenge. The finished product was practically indescernible from the traditional dutch baby. Touch down!

I always replace the white flour in any recipe with Victoria's Keto flour. Cup for cup or if the recipe is in gramms 100g white flour with 84 keto flour

I just made it on quick bread setting.. came out looking good, sagged some in middle and seemed too moist so I left in another 20 minutes. Added allulose instead of sugar before learning not advised. It tastes good! Very moist inside.. gonna slice/dry/toast. I'm at 7000' elevation. Next time less water, sugar or honey. My 2 cents ;)

Never made bread before. Followed recipe but without a bread machine. Mixed all ingredients in KifchenAid mixer. Put mixture in bread pan to rise for about 40 minutes. Rose pretty well. Placed in oven 350°F for 50 minutes. Very tasty. Only minor critique was it was a little on the crumbly/delicate side and my daughter noticed an eggy taste. Not sure what I did wrong, but it still exceeded my expectations. Yum. Perhaps I'll do better next time.
First attempt wasn't terrible 😅 but I will need to tweak things to work better for me.
I live at approx 4700 ft above sea level and I often have to adjust for that. I did a custom setting and I think it could use more mixing time as it was well into the bake cycle when I realized there was quite a bit flour not mixed in but considering everything else for a first try it's edible and pretty tasty. Because some had mentioned it was too salty I reduced it by half and I think the full amount would make a difference.
When this batch if PKF2 is gone then I will grind up my Eincorn and give it a try ❤❤❤

Turned out really well, perfect amount of salt for me but I would like to make it without the baking powder, I seem to be very sensitive to the bitterness in it.

My bread machine is 30 years old and has very few "customizations". It only has one rising cycle so I think I'm good. I've also never baked it in the machine. Even with traditional recipes, baking in the machine was dicey. I let the machine do the hard work, let it rise, then transfer it to a loaf pan and bake it in the oven. Gonna see how it works with one of Victoria's recipes.
The one experiment I'm going to do is how I handle the yeast. Proof it in the water first and know it's active, or put it into the flour still dry with, by now, cold water.
My family and I have benefited from your videos so much, I can't even tell you. Thank you for sharing ☺️.

Please help, i made the new 2.0 flour version posted 3 months ago, i am in Canada so cannot get bamboo fiber so substituted with oat fiber, put in 228 grams or 3 cups as mentioned, now it just tastes like oat fiber, i noticed the oat fiber has increased substantially and the almond flour has decreased from the original perfected keto flour from your first videos, is that correct, , is there anything i can add to make this not taste so much like oat fiber?? I hate to waste all those ingredients
Oat fiber taste VERY strong that’s why I like bamboo fiber. I’m sorry but there is no way to stop that strong taste

Hi Victoria. I am about to have a bread in a lump. I have an old bread machine without any "gluten free" options. I put all the ingredients in exactly but looked in the window of the machine and it's a lump. Why do we need a gluten free setting when there is gluten in the recipe? Please clarify for me as I am confused. THANKS~~
There is no gluten in the recipe. Just yeast, for flavour but that is not gluten. If you do not have a gluten free button on your bread machine you can use the quick dough/bread button. My machine is older so I used the quick bread option.

@@paulasmith8643Just use table sugar…the yeast eats it, so sugar substitutes don’t work. Inulin is a prebiotic fiber.

If we are using the 2.0 flour should we remove the Xantham Gum and replace it with 1 Tablespoons of Guar Gum and 1 Tablespoon of Psyllium Husk Powder?? Since I just made up my first batch of 2.0 can I add the two ingredients to the flour that already has Xantham Gum in it?❤️🙏❤️🙏🙏🙏🙏

If you you buy the Eincorn whole grain, sprout then dehydrate, it unlocks even more nutrients and gets rid of virtually all all of the lectins. You can then grind as you need.
