@@kathleenpludums2248 I am in Asia and I bought the relatively cheap PerySmith bread machine. It has two paddles and does the job perfectly well. All bread machines should mix well though. There must be something wrong with your unit.

I converted this to a manual recipe because I didn't want to dig for my bread machine. I combined the yeast, water & honey and let it proof (about 5 minutes) I mixed the butter (I melted it) with the beaten eggs in one bowl, combined all the dry ingredients in another and slowly added them, alternating, into the bowl of my stand mixer. I let the hook knead the bread on low for 8 minutes. I turned the dough out into a buttered loaf pan and set it in a warm area, covered with a hand towel. After an hour, it had risen *beautifully*, more than doubled in size! I baked at 400 for 40 minutes. It is easily as high as a standard, store-bought loaf. Light, fluffy, soft with a perfectly chewy crust. I am in heaven. THANK YOU!
Deirdre, I made this dough for the first time last night and almost cried when I saw how beautifully it had risen after an hour. I made pizza with it rather than bread and it was an emotional moment when I opened the oven after 15 minutes and saw that beautiful, puffy pizza crust. Thank you a million times over!

Thank you Deidra. I pray you are still in this world and will one day come back to help the low carb community with your inspired recipes. After many, many bread fails, (too cakey, too eggy, hate almond flour, didnt rise) I find this. It is BREAD. Thank the Lord. I make this as a loaf, but I also make buns/rolls. I use this in my machine on the dough setting, then remove the mixed dough and make bread rolls to cook in the oven.. They are absolutely amazing. I take out of the bread machine after it has mixed the dough but before the first rise. I cut into 80g balls, shape into buns, then prove for two hours. Bake for 25 mins. These buns freeze well, just micro on high straight from freezer for thirty seconds and they are just like they were when fresh out of the oven. Amazing recipe. Thank you x. PS! I would love to know how to make this recipe for non low carb, as they are just perfect and my husband loves normal bread. I guess I would just sub the oat fibre and flax for ordinary bread flour…and keep the same amount of vital wheat gluten for the amazing bounce and lightness.

Hi Deirdre, have been on Keto and intermittent fasting for over 2 years when I came across your video. I bought a zojirushi bread machine in Canadian dollars during the pandemic. With taxes in, paid over $600.00. Made first loaf Oct 8 2020. We happily ate the whole loaf. It is now December 28th and I will be making my 19th loaf today. @@blessedmomma6626 I make this for my diabetic mom and her sugar doesn't spike when eating it. Helps her to stay full as well. I actually lower the amount of vital wheat by a 1/4 cp and use either more almond flour or add lupin flour.

This is delicious. For those who have trouble with this bread not rising, I mix the yeast and the honey together and put in the "well" on top of the dry ingredients and let it rest for a couple of minutes. This bread rises so high it hits the top of my bread maker.
Since my husband and I started Keto a year ago today (9-3-18), I have been looking for a bread machine recipe that makes a loaf that actually tastes and feels like bread. After making, tasting, and throwing out many loaves of bread (bread machine and manual recipes) found online, I came across Diedre's recipe in an online Keto group to which I belong. I didn't have the highest hopes considering my experience over the last year, but I watched the UA-cam video and listened to Diedre talk about this recipe. I read reviews. AND ONCE AGAIN I BECAME HOPEFUL! For this being Diedre's first video, she knocked it out of the park! I made the bread today, and my husband and I did a taste test. After tasting it warm with a little butter on it, he said he would like to have it for his whole meal tonight. Then he asked how many slices it made. I told him 16. He said, "Hmmmm..." Then he asked if I would be making more tomorrow! Diedre, if you read this please know we appreciate your work in developing this recipe, making the video, and sharing it. Thank you so much.
Super bread. I bought a new bread machine to replace my very old one, which never worked right anyway, after seeing all the recommendations for this recipe. I was not disappointed! One very minor quibble--pink Himalayan salt is not sea salt. It comes from the Himalayn mountains.
*esalenchik* I made this bread twice without the sweetener. Then the last time (the third time) that I made it, I used Stevia as the sweetener, and *boy* was that a game changer! The third loaf tasted *exactly* like store bought bread! Mind you, I may have forgotten how store bought bread tastes like... but you get the gist.
I have tried a few recipes all touting to be the best. You didn't brag and yet yours is the best that I have tried thus far and least complicated to make. Actually taste like bread. Yes, the ingredients list is a bit longer but most low carb diet will need those in their pantry anyway. Shame that copycats don't give you credit! Thanks for your generosity.

Diedre, I don't know if you still check the comments, but I have to tell you that the old saying "better than sliced bread" truly applies to your recipe. I was paying $8.00 a loaf for low carb bread online, and your bread has 'em beat hands down! Yesterday I took a couple pieces with me when I played golf and asked the cook to make me french toast after. It came out delicious! I made the recipe with my bread maker set to dough - I flatten the dough out and cut it into to 6 equal pieces which I bake in pot pie pans to make hamburger buns large enough to cut into thirds; 1 top, 1 bottom and one perfect round center piece of bread, thanks to you! Just got my first loaf out of the breadmaker, and it is SOOOOO YUMMY!!! I made 2 recipe changes...added 1tsp baking powder to keep the loaf from falling as another poster recommended...worked like a charm! Also, did not add honey or regular sugar of any kind. The new instant yeasts don't need sugar to activate...they're already activated. I got a beautifully risen, delicious loaf that comes out an less than 1g carbs per slice!! WINNER!!!
Just made this bread using my mixer! It’s amazing, thank you. Only thing I changed was not adding the sweetener which I’m not a fan of. I’ve tried a number of recipes and this is by far the best and just like normal bread. It’s worth making the effort to purchase the ingredients online (I’m in Australia so not easy to buy ingredients in stores) and have them in the pantry. Made two loaves from this recipe. Fantastic!

Thank's for the recipe, will be making it after I order the ingredents from amazon, just a hint, the heel's of the bread I cut and let them set out for a day and then put them in my food processer, add a few spices and make my own bread crumbs, of course I toast them after I have them ground up. realy good. tks again Nicky
Hi Diedre, thank you for this recipe. I tried to make it in my old bread maker which cannot make a 2lb loaf and only has a two rise function which I have picked up is a no no. The bread smelled very convincing while cooking and as I had used half of each of the ingredients there was not a lot of volume. The result was only two inches high but it had a good texture and tasted good. I am going to make your oven baked version tomorrow and perhaps put some pressure on to have a new bread maker for Christmas. The yeast was well in date so I don't think that is the problem. By the way I am a type 2 diabetic and at 77 I work hard at keeping my blood sugars low. Once I have baked a successful loaf I will test my blood sugar reaction.Thank you for all your hard work. Just made your bread in my new bread machine, I hadn't used one for over 20 years as a result I goofed on the setting and put it on the cake setting. One hour and 30 minutes later I had a beautiful loaf of bread that I have been enjoying immensely. Thank you. Like you, I have been an avid bread maker for many years (at least 55).I have been enjoying Keto for 2 years and it maintains my healthy weight without feeling hungry or deprived. Hi Deirdre, your recipe has been a God send since I discovered it 3 years ago. In the UK we now have a supply problem with organic oat fibre. I have discovered that a direct replacement of oat fibre with ground chia seeds gives the same wonderful result. Thank you for your life changing recipe!
I just made this recipe last night, also cooking on the regular bread setting (3 hrs, 25 minutes) - and it turned out absolutely perfect. Chewy and delicious. I have been ordering low-carb bread from the internet and while the carbs fit, the preservatives needed to make bread suitable for that purpose made the taste dry and lacking. You know what sometimes it takes a spark and then you have it!! When I first started Keto I knew it was going to be an uphill battles for me because I love bread. Because of your great recipe I not only can eat bread again I have realized because of the spark you ignited in me other ideas for low carb pastries such as hot dog bun, hamburger rolls, and many other pastries. I’ve made this bread. It is awesome! Only thing is you can’t put anything too liquidy on it or it gets gummy. I put a hot dog and cole slaw on a piece and the cole slaw made it gummy. But I can deal with not putting anything like that on it because it is the best low carb bread I’ve come across. I also toasted it, it takes longer to toast but I put some peanut butter on the toast, so good! Thank you for this recipe!!! 😋
Thank you Diedra for a best tasting bread ever . It is so good that the rest of my family that is not on Keto enjoys it as well . I have used the breadmaker on dough setting and used the same dough for different shape buns and pizza dough .
I made this bread today, only used 2 TBSP of Swerve as I don't like things too sweet. Anyways, it turned out REALLY good. This is the best recipe I've tried so far, like real bread! I'd like to try maybe some citric acid in it to make it taste like sour dough. I only used my bread maker to mix the dough really well, then shaped it in a loaf pan and let it rise then baked in the oven. Fabulous. Thanks for the recipe!

I have made this twice now. This bread came out just perfect. I can not believe it. Made it in bread it first following your kitchen aide mixer version to the letter, it rose very well and was a great loaf. I then followed your bread machine version and finished it off in my oven on my second version, I added 2 tablespoons hemp seed during the kneading cycle, when cycle was done I transferred it to my Pyrex bread mold, gently brushed an egg wash over the proofed dough, sprinkled with Trader Joe's Everything Bagel mix, covered with greased plastic wrap and placed in my oven with a bowl of steaming water and let it rise a little more for 30 minutes. I then baked in a preheated 350 degree oven for 30 minutes and my loaf baked ridiculously high. I can't thank you enough for figuring out the most easy perfect recipe.
Life changer, for real. Fantastic recipe! I made it as per your instructions (well, with xylitol instead of swerve) and it came out as an super tasty multi-grain style bread. Subbing out the flax meal for almond flour makes more of a whole wheat style. Both are amazing (almond flour version came out a little dry but I mean, keto=mayo/dressing on sandwiches!). Keep doing what you do!
I just made this bread and it was AMAZING i am so happy I found this i can't even explain. I can't stand the taste of most of the Keto breads out there because i hate the taste of almond flour and coconut flour. This just tastes like yummy normal Bread you would never know it was KETO. I actually think this bread is so much nicer then store bought regular bread. Thank-you so so so much Diedre where ever you are. You are a GENIUS.....oh and just letting you know I found it impossible to buy Oat Fibre here in Australia so I used Psylliium Husk instead and it still worked 👍😊.
I just wanted to say thank you for this amazing recipe - it has meant that I can actually follow a low carb diet because I had been missing bread so much that I didn't think it was going to be possible! I've also shared it with a low carb Facebook community as I am so delighted to find low carb bread that tastes of bread! I make in in a Panasonic bread machine (quite popular in the UK) and have tweaked it slightly. 2tsp of yeast is enough, I leave out the flax (just because I don't love the taste), and I put the ingredients in the other way round with the liquid on top because that's how my bread machine works. I use the gluten bread setting and voila - a perfect loaf. Thank you, thank you, thank you Diedre!!!

I did this on the regular wheat setting and it came out really nice. I put the recipe in my fitness pal and it showed 1 net if you get 16 slices. I didn't include the tsp of honey in MFP because the yeast eats it. I also left off the swerve, because MFP doesn't subtract the sugar alcohol and you don't have to have it anyway. I had this recipe bookmarked for a long time, I finally tried it. Overall, a really decent bread, it really lends itself to customization. A few notes: I followed the recipe (almost)to a "t" with 2 exceptions: I preproofed my yeast with the warmed water and honey (to make sure it was good) and I only put 4 tsp of sweetener instead of 4 tablespoons. I thought it would be too sweet. My bread rose a little,but nowhere near what you have in the video. I used the white bread setting (about 3 hours and 40 minutes). It has a really good mouthfeel except for a slightly moist or slippery feel, even though it s not wet. I think it was the Xanthum gum. It has a tendency to do that sometimes. I actually put my loaf back into the oven for an extra 10-15 minutes on 425 to try to get a little more color and crust on the loaf and it helped that xanthum mouthfeel a little bit. I will definitely make again, but I think I'll try cutting the xanthum by a third or half to see if I still have the texture without the "slippery". Great recipe, thanks for sharing!

I made this bread in my Regal bread machine yesterday. It is delicious and so easy to make. I happened to have all the ingredients as I already make low-carb bread. I made a turkey pastrami sandwich for breakfast. It sliced perfectly, and it was so good. Thank you so much for the recipe. It will become my "go to" bread recipe.

I have been making this incredible bread for over a month, and just love it! Have made the bread machine and the mixer, and grand results every time. We just can't keep it in the house! What machine did you use? I bought a new machine on Prime Day and it did not mix properly.
@@kathleenpludums2248 I am in Asia and I bought the relatively cheap PerySmith bread machine. It has two paddles and does the job perfectly well. All bread machines should mix well though. There must be something wrong with your unit.

I converted this to a manual recipe because I didn't want to dig for my bread machine. I combined the yeast, water & honey and let it proof (about 5 minutes) I mixed the butter (I melted it) with the beaten eggs in one bowl, combined all the dry ingredients in another and slowly added them, alternating, into the bowl of my stand mixer. I let the hook knead the bread on low for 8 minutes. I turned the dough out into a buttered loaf pan and set it in a warm area, covered with a hand towel. After an hour, it had risen *beautifully*, more than doubled in size! I baked at 400 for 40 minutes. It is easily as high as a standard, store-bought loaf. Light, fluffy, soft with a perfectly chewy crust. I am in heaven. THANK YOU!

Deirdre, I made this dough for the first time last night and almost cried when I saw how beautifully it had risen after an hour. Thank you Deidra. I pray you are still in this world and will one day come back to help the low carb community with your inspired recipes. After many, many bread fails, (too cakey, too eggy, hate almond flour, didnt rise) I find this. It is BREAD. Thank the Lord. I make this as a loaf, but I also make buns/rolls. I use this in my machine on the dough setting, then remove the mixed dough and make bread rolls to cook in the oven.. They are absolutely amazing. I take out of the bread machine after it has mixed the dough but before the first rise. I cut into 80g balls, shape into buns, then prove for two hours. Bake for 25 mins. These buns freeze well, just micro on high straight from freezer for thirty seconds and they are just like they were when fresh out of the oven. Amazing recipe. Thank you x. PS! I would love to know how to make this recipe for non low carb, as they are just perfect and my husband loves normal bread. I guess I would just sub the oat fibre and flax for ordinary bread flour…and keep the same amount of vital wheat gluten for the amazing bounce and lightness.

@@blessedmomma6626 I make this for my diabetic mom and her sugar doesn't spike when eating it. Helps her to stay full as well. I actually lower the amount of vital wheat by a 1/4 cp and use either more almond flour or add lupin flour.

This is delicious. For those who have trouble with this bread not rising, I mix the yeast and the honey together and put in the "well" on top of the dry ingredients and let it rest for a couple of minutes. This bread rises so high it hits the top of my bread maker.

Since my husband and I started Keto a year ago today (9-3-18), I have been looking for a bread machine recipe that makes a loaf that actually tastes and feels like bread. After making, tasting, and throwing out many loaves of bread (bread machine and manual recipes) found online, I came across Diedre's recipe in an online Keto group to which I belong. I didn't have the highest hopes considering my experience over the last year, but I watched the UA-cam video and listened to Diedre talk about this recipe. I read reviews. AND ONCE AGAIN I BECAME HOPEFUL! For this being Diedre's first video, she knocked it out of the park! I made the bread today, and my husband and I did a taste test. After tasting it warm with a little butter on it, he said he would like to have it for his whole meal tonight. Then he asked how many slices it made. I told him 16. He said, "Hmmmm..." Then he asked if I would be making more tomorrow! Diedre, if you read this please know we appreciate your work in developing this recipe, making the video, and sharing it. Thank you so much.
Super bread. I bought a new bread machine to replace my very old one, which never worked right anyway, after seeing all the recommendations for this recipe. I was not disappointed! One very minor quibble--pink Himalayan salt is not sea salt. It comes from the Himalayn mountains.

Also I leave out the extra sweetener as I don’t like sweet bread. I just use the 1tspn of honey to feed the yeast.
*esalenchik* I made this bread twice without the sweetener. Then the last time (the third time) that I made it, I used Stevia as the sweetener, and *boy* was that a game changer! The third loaf tasted *exactly* like store bought bread!
Mind you, I may have forgotten how store bought bread tastes like... but you get the gist.

I have tried a few recipes all touting to be the best. You didn't brag and yet yours is the best that I have tried thus far and least complicated to make. Actually taste like bread. Yes, the ingredients list is a bit longer but most low carb diet will need those in their pantry anyway. Shame that copycats don't give you credit! Thanks for your generosity.

Made this yesterday in the regular zojirushi bread machine and it is phenomenal!! Slices like a dream, looks better than store bought. Chewy with a soft center, crust on point.

I was paying $8.00 a loaf for low carb bread online, and your bread has 'em beat hands down! Yesterday I took a couple pieces with me when I played golf and asked the cook to make me french toast after. It came out delicious! I made the recipe with my bread maker set to dough - I flatten the dough out and cut it into to 6 equal pieces which I bake in pot pie pans to make hamburger buns large enough to cut into thirds; 1 top, 1 bottom and one perfect round center piece of bread, thanks to you! Just got my first loaf out of the breadmaker, and it is SOOOOO YUMMY!!! I made 2 recipe changes...added 1tsp baking powder to keep the loaf from falling as another poster recommended...worked like a charm! Also, did not add honey or regular sugar of any kind. The new instant yeasts don't need sugar to activate...they're already activated. I got a beautifully risen, delicious loaf that comes out an less than 1g carbs per slice!! WINNER!!!
Just made this bread using my mixer! It’s amazing, thank you. Only thing I changed was not adding the sweetener which I’m not a fan of. I’ve tried a number of recipes and this is by far the best and just like normal bread. It’s worth making the effort to purchase the ingredients online (I’m in Australia so not easy to buy ingredients in stores) and have them in the pantry. Made two loaves from this recipe. Fantastic!

Thank's for the recipe, will be making it after I order the ingredents from amazon, just a hint, the heel's of the bread I cut and let them set out for a day and then put them in my food processer, add a few spices and make my own bread crumbs, of course I toast them after I have them ground up. realy good. tks again Nicky
Hi Diedre, thank you for this recipe. I tried to make it in my old bread maker which cannot make a 2lb loaf and only has a two rise function which I have picked up is a no no. The bread smelled very convincing while cooking and as I had used half of each of the ingredients there was not a lot of volume. The result was only two inches high but it had a good texture and tasted good. I am going to make your oven baked version tomorrow and perhaps put some pressure on to have a new bread maker for Christmas. The yeast was well in date so I don't think that is the problem. By the way I am a type 2 diabetic and at 77 I work hard at keeping my blood sugars low. Once I have baked a successful loaf I will test my blood sugar reaction.Thank you for all your hard work. Just made your bread in my new bread machine, I hadn't used one for over 20 years as a result I goofed on the setting and put it on the cake setting. One hour and 30 minutes later I had a beautiful loaf of bread that I have been enjoying immensely. Thank you. Like you, I have been an avid bread maker for many years (at least 55).I have been enjoying Keto for 2 years and it maintains my healthy weight without feeling hungry or deprived. Hi Deirdre, your recipe has been a God send since I discovered it 3 years ago. In the UK we now have a supply problem with organic oat fibre. I have discovered that a direct replacement of oat fibre with ground chia seeds gives the same wonderful result. Thank you for your life changing recipe!
I just made this recipe last night, also cooking on the regular bread setting (3 hrs, 25 minutes) - and it turned out absolutely perfect. Chewy and delicious. I have been ordering low-carb bread from the internet and while the carbs fit, the preservatives needed to make bread suitable for that purpose made the taste dry and lacking. You know what sometimes it takes a spark and then you have it!! When I first started Keto I knew it was going to be an uphill battles for me because I love bread. Because of your great recipe I not only can eat bread again I have realized because of the spark you ignited in me other ideas for low carb pastries such as hot dog bun, hamburger rolls, and many other pastries. arizona dreaming Diedre says 4 grams per slice and she got 17 slices. Half of that is insoluble fiber, so 2 grams net carbs times 17 slices.
I’ve made this bread. It is awesome! Only thing is you can’t put anything too liquidy on it or it gets gummy. I put a hot dog and cole slaw on a piece and the cole slaw made it gummy. But I can deal with not putting anything like that on it because it is the best low carb bread I’ve come across. All you need to do is toast the slice before putting anything a bit liquidy and it will hold up fine.

I made this bread today, only used 2 TBSP of Swerve as I don't like things too sweet. Anyways, it turned out REALLY good. This is the best recipe I've tried so far, like real bread! I'd like to try maybe some citric acid in it to make it taste like sour dough. I only used my bread maker to mix the dough really well, then shaped it in a loaf pan and let it rise then baked in the oven. Fabulous. Thanks for the recipe!

I have made this twice now. This bread came out just perfect. I can not believe it. Made it in bread it first following your kitchen aide mixer version to the letter, it rose very well and was a great loaf. I then followed your bread machine version and finished it off in my oven on my second version, I added 2 tablespoons hemp seed during the kneading cycle, when cycle was done I transferred it to my Pyrex bread mold, gently brushed an egg wash over the proofed dough, sprinkled with Trader Joe's Everything Bagel mix, covered with greased plastic wrap and placed in my oven with a bowl of steaming water and let it rise a little more for 30 minutes. I then baked in a preheated 350 degree oven for 30 minutes and my loaf baked ridiculously high. I can't thank you enough for figuring out the most easy perfect recipe.

Life changer, for real. Fantastic recipe! I made it as per your instructions (well, with xylitol instead of swerve) and it came out as an super tasty multi-grain style bread. Subbing out the flax meal for almond flour makes more of a whole wheat style. Both are amazing (almond flour version came out a little dry but I mean, keto=mayo/dressing on sandwiches!).

I just made this bread and it was AMAZING i am so happy I found this i can't even explain. I can't stand the taste of most of the Keto breads out there because i hate the taste of almond flour and coconut flour. This just tastes like yummy normal Bread you would never know it was KETO. I actually think this bread is so much nicer then store bought regular bread. Thank-you so so so much Diedre where ever you are. You are a GENIUS.....oh and just letting you know I found it impossible to buy Oat Fibre here in Australia so I used Psylliium Husk instead and it still worked 👍😊.

I just wanted to say thank you for this amazing recipe - it has meant that I can actually follow a low carb diet because I had been missing bread so much that I didn't think it was going to be possible! I've also shared it with a low carb Facebook community as I am so delighted to find low carb bread that tastes of bread! I make in in a Panasonic bread machine (quite popular in the UK) and have tweaked it slightly. 2tsp of yeast is enough, I leave out the flax (just because I don't love the taste), and I put the ingredients in the other way round with the liquid on top because that's how my bread machine works. I use the gluten bread setting and voila - a perfect loaf. Thank you, thank you, thank you Diedre!!!

I put everything, IN ANY ORDER in my DAK bread machine from the '90s and it comes out perfectly every time! Thank you.
I did this on the regular wheat setting and it came out really nice. I put the recipe in my fitness pal and it showed 1 net if you get 16 slices. I didn't include the tsp of honey in MFP because the yeast eats it. I also left off the swerve, because MFP doesn't subtract the sugar alcohol and you don't have to have it anyway. Servings 16.0

You didn't use the honey because "the yeast eats it." But, isn't that the point? The yeast has to feed on something sugary to proof, yes?
I had this recipe bookmarked for a long time, I finally tried it. Overall, a really decent bread, it really lends itself to customization. A few notes: I followed the recipe (almost)to a "t" with 2 exceptions: I preproofed my yeast with the warmed water and honey (to make sure it was good) and I only put 4 tsp of sweetener instead of 4 tablespoons. I thought it would be too sweet. My bread rose a little,but nowhere near what you have in the video. I used the white bread setting (about 3 hours and 40 minutes). It has a really good mouthfeel except for a slightly moist or slippery feel, even though it s not wet. I think it was the Xanthum gum. It has a tendency to do that sometimes. I actually put my loaf back into the oven for an extra 10-15 minutes on 425 to try to get a little more color and crust on the loaf and it helped that xanthum mouthfeel a little bit. I will definitely make again, but I think I'll try cutting the xanthum by a third or half to see if I still have the texture without the "slippery". Great recipe, thanks for sharing!

I have been freezing every loaf and it does great. I slice and freeze for the week in freezer bags and take out a couple of slices for work lunch.

I made this bread in my Regal bread machine yesterday. It is delicious and so easy to make. I happened to have all the ingredients as I already make low-carb bread. In making low carb bread years ago, we used liquid LECITHIN instead of Honey to get the same effect without sugar.
