    I’m ahead of the curve for 2024. I have saved seeds for 3 years. I have canned all through 2023, and stocked as much meat and broths and soups, stews, beans, etc.. I stocked 2 freezers. I turned a bedroom into a prepped pantry. I literally don’t need to go to the store at all in 2024! TG because work has been terrible this year. I’m a carnivore so I’ve tried to really stock meats and broths. When shtf I won’t be picky. ❤ Happy new year y’all.

      Having meat canned is simply the BEST! Any time anyone asks what they should be prepping, my answer is always "meat". Fat and protein is all that is really needed to thrive. Carbs are non-essential. If more people realized this, their anxiety about being well-prepared would be greatly diminished. It's so very freeing!

    I’m in the UK.
    I’m doing ‘No Spend January’-I guess it’s the same format though.
    I’ve followed a lot of your canning recipes-I’m a ‘newbie canner’ and I love it.
    I have 4 tall freezers-all full.
    I have lots of canned jars ranging from orange & grapefruit to potatoes, carrots, beef in red wine, taco beef.
    Oh, my goodness, I think I’ve done most of your recipes Carter.
    Over Christmas, Tesco-the supermarket we use-had New Zealand lamb legs half price.
    About £14 British pounds per leg.
    We bought 7.
    I froze 1.
    The rest we cut the meat from the bone and I canned it.
    Some jars with Moroccan spice that I’ll use on flat breads with Hummus, minted yogurt & tabbouleh.
    Some jars with onion carrot and potatoes and some tomato paste, red wine and stock-oh my goodness, it is so delicious.
    The rest with no seasonings & I’ll add that to curry or biryani.
    I’ve stocked my pantry in readiness for January no spend.
    I’m so well prepared it’s ridiculous.
    With 4 full freezers, my canning jars & a well stocked pantry, I think I can go 2 months with no grocery shopping at all.
    I’m in my mid 70’s Carter, I love to cook and I’m now addicted to canning.
    And my husband blames you.
    I do all canning, WB, Steam & pressure canning.
    Yes, I bought a beautiful pressure canner.
    We call it Boris-after the British Prime Minister Boris Johnson.
    It’s called Boris because it big, it’s loud & full of hot air.

    I love your videos. I’d love to see more videos on how you use allulose in canning sweet items and the consistency of final product. I learned about powdered allulose from you and I did purchase from AZURE( I didn’t realize they had a syrup allulose). I’m a newer canner, and even though I do use Pomona’s pectin and lower sugar recipes, I’d love to learn from your experience of canning more keto/low carb style with allulose, etc. I’m planning to do the pantry challenge and clean out the freezers. I too have gallon bags of frozen tomatoes I need to make into something for Canuary as well. Will be doing a lot of baking of breakfasts and snacks for my kids since no store bought ones. Thanks for your content!!!

      Excellent, Emily! The vast majority of my "sweet" canned items use allulose. Did you see my sugar-free cowboy candy video? I spent some time in that one discussing allulose in canning...what it can and can't do, in my experience. ua-cam.com/video/qcItr51ZLcc/v-deo.html.     I’m with you on no grains, no seed oils, no sugar. No allergies, just a choice for health. I keep Coturnix quail in my city subdivision back yard for fresh organic eggs and occasional meat. I got my first pressure canner in Oct 2023 and started pressure canning meats and meals in a jar like your Brunswick stew! I’m looking for more carnivore/ketovore meals in a jar recipes to pressure can, and I’m retired as of today and getting my raised beds built up in January for my first tomato and herb garden in 10 years! Everything will be healthy and organic and I’ll be looking to can tomatoes, sauces, chutneys, and meals in a jar in 2024! Thank you, Carter, for your content and sharing your experiences. You finally got me through my fear of pressure canning and now I’m off to the races!!

    Thanks again Carter! I’ve been ordering from
    azure for a few years now- the first drop was “interesting”.. no communication at all from the lead person.. I ended up not ordering again until a friend decided to use her home as a drop site .. she lives very close to my home. She sends a text out the evening before I drop with a potential expected time, always text the following morning with a reminder. I enjoy communicating with others at the drop site, we are very like-minded people. I also live in Washington state 4 hours from the warehouse. They are a very “standup“ company, and I too enjoy supporting small businesses.
    Looking forward to new canning recipes and kitchen updates!

    Carter you are amazing, 78 videos - wow!! You really inspire me to be more productive in my kitchen and also in my garden.
    And I'm so glad that you are doing an azure haul, as I've sort of been on the fence about buying from them as far is if it's as cost effective as buying locally etc. So you've definitely given me some things to think on. Thank you for that.
    I hope you and your family had a wonderful Christmas. I can see progress happenings with your kitchen remodel, can't wait to hear more about that!
    And lastly, I watched you last year on the pantry challenge and have decided that I'll be joining you and others for the pantry challenge 2024. I'm really excited about! (Hugs)❤

      Yay! I'm so glad you'll be joining in the pantry challenge this year, ArkansasSquaw! Yes, the kitchen is starting to make some progress! The island was plumbed this week. Both the island and the appliance pantry were measured for counters yesterday. The carpenter and the electrician will be hopefully accomplishing a ton next week. You'll see it throughout the month.

    Carter you have more than enough preserved to do Jan. And Feb. Please share all with us I’m going to be gaining recipes from you and a few more to give me some help coming up with thing to prepare here at my home!     I love Azure standard, probably I spend the most money on organic dried beans, but they have so much else that is so worth my time. I buy vinegar and oils in gallon jugs. The frozen fruits are often a good deal. As far as people goes, I am sure it is different with every crowd. My local group are super helpful and collaborative.

    I'm taking care of my Mom who will be 81 on Wed & she eats so little it's literally just me. But I will be working on using up things in the freezer for sure.

    I have never actually been at an unloading because I have no vehicle and the truck always comes before my aide gets to me. However, I also never order a large amount of items and my pick-up lady is very understanding of my unique situation. I am disabled and I am a single mother of three disabled children. She just takes my packages and sets them to the side until sometimes the next day when my home care aide can pick them up.

    Hi Carter! So I am sitting here watching you on my new 65 in smart tv my grandson bought me for Christmas. My other tv was 32 and it has been driving him crazy for the last year lol
    First of all, I have been purchasing from azure for 5 plus years, I love them! But our coordinator is moving and no one was able to take over and find a new loading spot. I will now have to drive an hour if I want to purchase. We have been lucky, there were about 30 of us and all pitched in! I did the least amount as I can't lift, but I was in charge of making sure all orders on the ground were correct!
    Next, I am going to do the pantry challenge as well as the canuary challenge. The first, to use up all the things from 21 left and clean up odds and ends. I am not going to purchase anything. I have Hamama greens to sprout up that are getting old and other sprouts. In my storage room are about 30 sw potatoes 20 spaghetti squash 12 butternut squash and 8 lbs of baking potatoes. 5 lbs of onions plus gr onions in the garden and misc herbs. I have enough veggies freeze dried and pickled to get through I also have 6 avocados 1 basket tomatoes and a bag of lemons and Granny Smith apples. I think I'm good. Plenty of cheese and sourcream buttermilk in freezer and boxes of almond oat and coconut milk powd milk for back up!
    Canuary the goal is to empty two freezers and freeze dry( if Esme will behave herself) and can the rest.
    I do not have an inventory but it is arranged by year in cupboards so I know where to start
    I prepped a bit today, made sandwich and cinnamon bread, blue berry, bran, and cornmeal muffins! I'm as ready as I'll get lol
    The plan is to empty all the ready made meals in freezers first. Then start on jars I am keeping a list of what I used out of the pantry staples and freezer only. Ready meals won't be counted as they are left overs.
    I love that big Island and look forward to seeing what you come up with over the next 4 weeks! Ps your mango chutney was a hit Christmas. I poured it over Bree and baked it.

Great goals to clear out the old and miscellaneous items. Bread and muffins! I think I have some of each in the freezer. I will pull some out to defrost tomorrow. Great idea!
      I am so excited about the island. I had the carpenter make a temporary plywood top for me so I could use it in the interim. I am so very glad I'm doing this update. There should be lots of progress the first couple weeks of January. In theory, the appliances will go in the first week of February, and it'll be done. We'll see!

    Happy New Years and hope your Christmas was good I got a bunch of new seed trays for Christmas that are more sturdy. I got a steam canner. I am participating in cannuary and doing the pantry challenge for January only since this is my first time. I am a huge azure standard fan I have been using them since 2019 since I cook from scratch I buy all my pantry staples, grains and oats, butter, oils, vinegar, tamari, ketchup all in bulk I love them

    I am joining the challenge with you - I have been using things from one of our freezers for quite some time and we have almost eaten up all the older items. I'll be continuing to use older meats and canned goods. We will only need to shop for yogurt or milk (I don't buy milk often and I currently have almost a full gallon so will be starting the New Year with some clam chowder to use up my milk.     Happy New Year! Many channels show their grocery hauls. Your cost analysis was educational and interesting for me. I live in Miami, FL and have a Publix and Whole Foods market close to me. The Azure pickup is not convenient at all in this very urban area. But, based on your information, I might consider a one-time try to see if I can order enough to make the savings worth my time.     Hey Carter, about onions - get a small clip on type fan. I pull it out and run it across the onions and my hands, so the fumes don’t get to me.

    I started watching G&P a couple of months ago. Canning and preserving isn't new to me, but many of your recipes are. I watch/listen from the tv and rarely comment, but love your channel. After losing my upright freezer, FULL of garden goodness and home culled poultry and more, i am more adamant about getting my chest freezer canned up. That's my goal, January- to as long as it takes. I also lost most my refrigerator/freezer foods in November. Freezer items were still good, but refrigerator stuff spoiled . I was gifted a used refrigerator yesterday. Its much larger than the old one. Thus, here in my humbled singlewide mobile home, cabinets and countertops have had to be cut out to accommodate the refrigerator. Though the remodel will take me months to complete, im excited that it's happening. My son's doing all the construction labor, my budget is why it will take months to complete. Happy New Year! I look forward to beef recipes for January Challenge and Canuary. I have ¼ of cow, locally farm raised and tons of fozen fruit that need to be canned/dehydrated preserved.

    Spreadsheet for inventory would be amazing. I just have a canning log book, when I can I write the batch details (ingredients, method) in the log book. In case I ever need to go back and see how I prepared something I will know.

      Love the canning log book. I tend to make notes on the recipe pages in my canning books or on the printed online recipes. I would like to consolidate all of that at some point. Great idea.

    Definitely doing this. We have tons of veggies to use up from our freezer and plums! I think we are doing Jan and Feb of pantry challenge but part of January only one person will be home so it feels like cheating lol.
    My one rule is we can purchase beef if needed since my stock is low on meat and I’m keto/carnivore ish. Also almond milk for my husband and cashew milk for my daughter and eggs from our farmer. We do get fresh veggies delivered every week with our CSA but that’s already paid in full so it’s not an extra cost.

      Thanks, Lisa! We used to have 3 orange cats. Mama, Baby and Uncle Daddy Baby Daddy...as feral cats will do! Sadly, we lost our big male almost 2 years ago. He and the Mama cat were born under our deck in Atlanta. The baby was born in my guest room sink in Atlanta. We had too many coyotes then, so I kept bringing them in.

    Participating in the pantry challenge for the first time. I’m not a fan of seed starting and garden planting since I’m not in your zone, so I’ll likely skip those videos.     Azure Standard ha sooo much- 6-7 catalogs of things. I love Azure for my canning goods and for produce and supplements-sooo much there. I also love their cheeses in huge blocks because we can eat some cheese in THIS house.

    Hi Carter! Yes I’m participating in the Three Rivers Challenge, for the month of January. I also plan on canning at least 1 product a week in January. My freezers are well stocked and I have some sweet potatoes, russet potatoes and a few butternut squash.
    I’ve got carrots and beets in the ground. Zone 8A, New Mexico.

    Hello Carter so good to see you. I made a throw back salad for Christmas Eve. Wedge salad. Crisp iceberg lettuce wedge, blue cheese dressing and lots of crispy pepper bacon pieces. Yum.
    I made mine with Ranch dressing (never been a blue cheese fan) Everyone raved. I need to make a clipboard for my freezer. Husband doesn't look for oldest date. Cooked cabbage and sausage for lunch yesterday and husband pulled sausage I purchase last week. Bummer!!!!
    Maybe the clip board would work for your pantry. Nice Azure Standard haul. It doesn't ship to your door? Wishing you and David a Blessed and Happy New Year 2024.

      Yum to the wedge salad! Excellent idea, Donna! A clip board sounds like a good idea. Have you thought about how your tracking sheet would look? I'll have to think about that. It would really be handy to mark things as I add/subtract.
      As far as I know, Azure doesn't ship to my door. Is that a thing?

      I have never ordered from them ? Don't know. The closest big city to me is Dallas or Ft Worth I avoid like the plague.

    I’m so glad you shared the info about Azure. I’ve often wondered if it would be worth it for me as we too are a 2 person empty nester household. After watching this, I’m going to look into it more. Well, after the pantry challenge is over. 😂

      Purchasing in bulk or just for monthly needs is a good reason to try Azure. I live alone, except my son lives behind me. I don't order monthly, however I find ordering from Azure worth my time and generally a decent savings overall. My pickup is 70 miles from me. The only benefit of driving that far or having it in that area is that my daughter is 2 miles from pickup location. I either get to visit with her and the grands when I pu or she pu for me when I can't do it.

    Hi Carter. I'm thinking about doing the challenge. My husband and I already eat mostly from our pantry minus fresh veggies, bread, and dairy. I'm going to try my hand at making bread so I don't need to go to the store for that. I guess my only rules would be to buy milk and salad stuff. I'm going to give it a shot.

    I have not decided what my rules are- except. If I don't need it, I don't need it! I made a 4 week menu +1. 🤔🤨 The full month menu that I added at least 1 new menu item, to test. The plus 1- is the old standby's that we all like, and it's for- yeah, chicken just doesn't sound good today. 😆Or, where did the day go? I'm not going to put my thoughts into stress mode thinking I shouldn't go to the store. However, I'm looking forward and HOPING to not need to go to the store, because, I just don't like to shop. Azure- I'm going to think about it, again. My first run was a disaster. If it could go wrong IT DID! 🤣 Had the day to pick it up- driver broke down. moved to another day. Could not go that day. Driver was new, and showed up WAY early and just dumped the stuff in the parking lot. Umm, yeah, it wasn't a good experience for me. Especially with it being almost 1 hour to get there. But, I will really will consider giving them another shot. Happy New year.

      Your rules sound good enough to me! I have many days that chicken just doesn't sound good today, It's always good to have a back up plan. So sorry your Azure delivery was so messed up. I've only had the one experience, but it was really good. Hopefully your next order will be smoother!

      Thank you Princess & not all fries, but everything you did !!! Slices for mash taters & I bought the 8 way splitter for wedges !!! Since I bought the 1/4 inch french fry splitter I can dice them up as hash brown's !!!
      I built an outside food processing kitchen because the kids cannot see their pets being processed into their food !!!
      It is designed to process Bonnie & Ms Belle the hogs, chickens & for canning, dehydrating, fermenting, GRINDING CORN & WHOLE WHEAT BERRIES AS NEEDED !!!
      I have over 1000 lbs of wheat alone & for pickling ETC !!! Sorry about the caps !!! I will start here soon canning over 1500 wide mouth quart size jars with EVERYTHING as the kitchen shall be completed in a couple of days !!!

    We will be doing the challenge. Though will be purchasing dairy products . I purchased from Azure. My group was all organized you just had to find your name and pick it up. Best price for allulose I have found in Phoenix.

    I do have some questions regarding Azure. I understand your money savings for the food....but did you count the gas and the wear and tear on your car to go pick this up. Did you count your time (At least $30-$40 per hour min) from the time you left your home until you got back? Some people have to travel over an hour to their pickup and still have to help unload the truck, and drive over another hour to get home. This is not a savings in my book, since I can order online, drive 15 min to the store, and they load my car, and I drive 15 min home. Just curious.

      Hey, GGMM! All good questions with different answers for everyone. My pick up location is about 2 minutes beyond Sprouts/Publix. The unloading took longer than a grocery shop, but I counted it as my workout for the day...lots of steps and carrying moderately heavy items. For me, it was a total win, but I'm sure it won't be that way for all.

    Sorry, this is a bit lengthy but you are the canner ‘queen’ in my opinion.
    I did make a comment on one of your previous videos.
    My name is Matt / Matthew from Australia.
    I mentioned that I have intention to get into canning and I mentioned to you before that I have purchased a ‘22 litre Hawkins Big Boy’ pressure cooker.
    I purchased this with the intention of doing canning and was unaware of the difference between a ‘cooker’ and a ‘canner’ and at this point have not used it, I’m a bit apprehensive.
    Upon research, I have been reading that pressure cookers are NOT suitable for CANNING, but I’m a bit confused and I’m leaning on you for some knowledge/experience in an effort to clarify something for me.
    From what I have researched, ‘smalll’ pressure cookers are inadequate for canning due to their size and inability with regard to maintaining a consistent temperature, for canning , in as much as they don’t have the bulk/mass and they fluctuate between hot and cold far too quickly due to the their small size, that makes sense.
    I was naive when I purchased my pressure cooker as I had intention to do canning with it, in particular food including meats.
    From what I’ve learned recently, meats have low acidity and need high temp.
    My device is a pressure cooker, not a pressure canner. However it states in the instruction manual that it cooks food at 122deg Celsius / 251.6deg Fahrenheit and uses a 15 psi weight as a means to maintain pressure, it has no dial gauge.

    Everywhere I search on the www. says that one cannot use a pressure cooker for canning low acidity foods such as meat / poultry.
    I’m confused.
    If my pressure cooker (not a pressure canner) which is large 22 litre operates at 250 deg. F, why would it not be enough heat to kill Clostridium botulinum.
    Could you please give me your thoughts on this ?
    I would have preferred to get an ‘ All American’ but cost was an issue and I got the Hawkins cooker for a very good discounted price.
    Am I thinking about this wrongly? Wouldn’t 250 degrees F with a 15 psi pressure release valve do the job correctly?
    Please, can you clarify things for me ?

      Thank you for your vote of confidence, Matt! I'm very pleased to have you here. I wasn't familiar with this product, so I've done a bit of research this morning. After reading the product manual reasonably thoroughly, I lean heavily toward it not being suitable for canning. For starters, they do not address using the product for canning anywhere in the manual, and they state clearly not to use the product for anything other than its intended purpose. Do I always follow directions? No. However, I do want to know that my equipment is doing the job I intend it to do. I have not heard the discussion around the size of the pressure cooker making a difference. My understanding is that the issue is more about whether the temp and pressure actually hold long enough to make a canned product safe for shelf storage. I feel your pain on this one. I was going to suggest the presto 23 qt pressure canner, but what's up with tax there? It looks like nearly 100%. Yikes.       It is! I had them put a plywood top on it for me, so I could use it in the interim. It was plumbed for the sink this past week and measured for the countertop yesterday. I can't wait!

    It’s very strange but all of your videos seem to be recorded without stereo. I usually use just one earbud but with your videos I always have to change from right to left or I get no sound.

      I am so sorry about that. Every now and then, someone else pops in to say the same thing. I have recorded with both a camera and an iphone. I have used directional mics and wireless lapel mics. All my voiceovers are done on an external mic straight to the computer. If you have any ideas, I'm open to trying something (not too technical!).
