Today, I made savory, moist, and soft whole wheat milk bread using whole wheat!
I tried making the dough using the folding method, but because I used whole wheat, gluten did not form easily.
Usually, it only takes 2 folds, but this time I added 1 more and went through the folding process a total of 3 times.
The texture was definitely preserved and I was able to make soft bread. 😊
When using a kneader, just follow the recipe. Because I added whole wheat instead, the kneading time took much longer than usual!
Mix evenly with a spatula from time to time and rotate the kneading machine until the dough becomes elastic and the gluten is well established. *
(100% whole wheat bread felt too rough for my taste, so I made it by mixing whole wheat and bread flour. Next time, I will try making bread made with 100% whole wheat!)
Milk bread is delicious, but whole wheat bread has a savory charm even though it is rough. Perhaps because milk was added to the dough, it is much softer and more moist!
It's delicious to eat freshly baked warm whole wheat bread, and it's also delicious topped with strawberry jam. 😊

🍞 Whole wheat milk bread 🍞
▶Ingredients ◀ 21.5x9.5x9.5cm pan
Preheat to 338℉(170℃) for 15 minutes, then bake at 320℉(160℃) for 24-25 minutes (using Smeg oven)
170g milk
30g eggs
50g sugar
5g salt
5g instant dry yeast
170g bread flour
110g whole wheat flour
40g unsalted butter
Melted unsalted butter
◼ Storage method ◼
Store at room temperature and consume within 3 days. It is not recommended to refrigerate bread! To store it for a long time, keep it frozen.

I made this today and it taste so good. Even though at the 2nd proof, it didn't rise as much as in the video after waiting 50 mins. Maybe next time i will wait longer

이 영상보고 만들었는데 넘 맛있게 구워 졌어요
2차발효가(1시간30분정도 했어요) 잘 안돼서 빵틀 1센티 아래까지 발효해서 구웠는데 그래도 맛있게 구워 졌어요
이빵을 아침식사 빵으로 정착하려구요

스테비아는 끝맛이 쓰다고 하더라구요. 스테비아로 대체는 안하시는게 좋을 것 같아요! 차라리 설탕양을 줄이시는게 나을 것 같은데 너무 줄이게 되면 식감이나 촉촉함이 덜 할 수 있으니 참고해주세요! 통밀 100% 식빵도 만들어보도록 하겠습니다! ^^
