I've made linzer cookies with this recipe, and the family absolutely loved it. The most important thing to to roll out the dough on a floored surface instead of between 2 parchment papers (I tried that method and the dough sticks to the parchment). I also press out the shape and then stick the whole thing back in the fridge for 10 minutes before taking off the excess dough around the shapes (while waiting i just roll out another piece of dough)

Made this but the mass was soft even after 2 hrs in the fridge, so I add it more flour, the taste was really good, everyone love it.

did you add more flour than required? they also soften very well if you leave them with the filling for several hours

Almond is for the flavour, u could try other nuts instead or yes u may just use flour but the cookie will taste like butter cookies instead
