Vegan Crème Brûlée I The Buddhist Chef

  • Who knew Crème Brûlée could be so simple?
    Crème brûlée is a French dessert that literally means “burnt cream,” it’s a custard with a caramelized shell coating the top.The contrasting layers make it one of my favorite recipes. It’s generally served in individual dishes called “ramekins. It really doesn’t get much better than this! I used coconut milk for this recipe which makes it vegan! And NO it doesn’t taste like coconut!! It’s creamy, elegant, refreshing and the crispy caramelized crust on top is simply divine.It is one of my absolute favorite desserts!
    Vegan Crème Brûlée
    3/4 cup cane sugar (175 g) + 1/4 cup to caramelize
    1/4 cup cornstarch (35 g)
    a pinch of salt
    a pinch of turmeric (optional)
    2-400 ml can full fat coconut milk (800 ml total, or 3 1/4 cup)
    4 tsp vanilla extract
    2 tsp lemon juice
    1/4 cup vegan butter (55 g)
    In a saucepan, off the heat, combine sugar (3/4 cup or 175 g), cornstarch, salt and turmeric.
    Stir in coconut milk, vanilla extract and lemon juice, stirring with a whisk.
    Bring to a boil, stirring constantly.
    Simmer for one minute and remove from heat.
    Add vegan butter and stir until melted.
    Pour the mixture into four 180 ml (3/4 cup) crème brûlée dishes or ramekins.
    Let cool and refrigerate to chill completely.
    Before serving, sprinkle with the additional sugar and caramelize quickly with a crème brûlée iron or a torch. You could also caramelize the crème brûlée under the broiler of an oven.
    Serve immediately.

      manic panic More vanilla, it’s very sweet and is more of a custard, rather than a true brûlée.

    Had friends coming over for dinner and made this on a whim. A big hit, everyone loved it vegan and non vegan! I didn’t have the butter on hand so I used a mix of 3/4 cup of coconut oil and 1/4 cup cold water and heated it up just enough so they would mix together, then took my 1 spoonful from that (I had way too much but that was ok). Worked perfectly! Thanks for such a great recipe. 😊

    Thanks for the recipe! I wanted to cook something indulgent and sweet for my loved one, and this recipe was super helpful.
    My love and I have a tradition of cooking each other a mystery dish. We buy ingredients and hide them, then we agree on time so that we can cook everything in secret. Then one serves a dish to another. The one who’s tasting it has their eyes closed, they eat their first bites like that and try to guess the dish. And when they guess the dish, they may open their eyes and just enjoy their food!
    I’ve just cooked a creme brulee for my love and put it in the fridge. Now I’m waiting for her in another room while she’s cooking. Hope she likes a creme brulee! I’ll come back here for an update later.
    Upd: She really likes it! She has never tried a non-vegan version so it’s her first time, and she says the texture and the balance of tastes is incredible.

    Creme brûlée
    3/4 cup cane sugar
    1/4 corn starch
    Pinch of salt
    Pinch of turmeric
    Stir
    800ml coconut milk full fat
    4 tsp vanilla extract
    Lemon juice
    Bring to a boil for 1min until thick ( stir well)
    1 tbs vegan butter
    Pour into ramequin
    Put in fridge for 2 hours
    Add small layer of cane sugar
    Torch top until ready

    I love creams Many times I usually make carrots, squash and leeks. Have you ever tried adding coconut or almond cooking cream? I advise you to try it in one of your creams gives a special touch. I really like your recipe looks amazing to suck your fingers. I will look for the ingredients. Please, you can upload a veganized Irish recipe that is summer. I congratulate you on your incredible recipes. You are a crack. You should make a recipe book and put it on the market.

      Annie Laurin Dear, “Plant Based” literally means: derived from plants, including vegetables, grains, nuts, seeds, legumes and fruits, but with few or no animal products. If the ingredients are processed or not, that doesn’t change the fact that they are plant based. Also vegetable oils enter in that category.
      What you mean is a “Whole food plant based diet”, which only contemplate unprocessed items.
      “Vegan” is a philosophy and way of living which seeks to exclude all forms of exploitation of, and cruelty to, animals for food, clothing or any other purpose and as you can see, these channel is not aiming to any philosophical issue. It’s about teaching you how to cook with plant based ingredientes.
      Get you definitions right, girl.

    Need to get me a blow torch! Your torch looks like it just screws on the gas cylinder? I'm not liking the ones I see available in most kitchen stores where it's for use with special gas refills for their specific brand of torch. Who makes your torch?

    Sad there's no vegan butter sold in Taiwan. No brands for selling vegan butter yet. Maybe try vegan butter recipe from Instagram and home made one.

    I suggest you try using a vegan butter that doesn't have palm oil since it's better for the environment and the animals such as Myoko's Vegan Butter. Also, your teeth are very nice.

      I have seen it in Whole Foods and Natural Grocers. I heard that Trader Joe's wants to start selling it too (or already started). I don't know if they have those where you live or if they carry them at your location.

      USS Glow Cloud i bought mine at Trader Joe’s though they were there one week and the next it was gone. Though they sell Miyoko’s cream cheeese all the time at mine
