Why no stop and start post taxi before takeoff run
The pilots may have a longer runway available for the performance needed on this take off so they clubbed the spooling time in the takeoff roll.

Hi Captain, please let us know the policy details of holding the throttle after TOGA. I can see till V1 pilot monitoring was holding it amd after gear up pilot flying kept holding it. Can the controls retract by G forces while climbing so that someone has to hold them?
I believe they do not auto retract till the flight director finds major mismatch in flight configs and performance settings. So why they need a hand on them?
