⬇️⬇️English recipe follows⬇️⬇️ 鹵水拼盤 材料: 急凍金錢肚12安士 急凍豬耳1磅 急凍雞翼2磅 急凍紅腸2條 炸豆腐3磚 鹵水汁1煲 蒜頭4粒 辣椒仔3隻 檸檬1個 處理: 1. 大火煲滾1鑊水,加入粗鹽1湯匙及白酒3湯匙。 2. 放豬耳、雞翼及金錢肚出水。 3. 放紅腸落鑊,一同解凍,大火滾起至起泡,清水沖洗乾淨。 烹調: 1. 在煲內,大火煲滾鹵水汁。 2. 金錢肚及豬耳,放入煲,轉最慢火,炆30分鐘。 3. 轉大火,加入紅腸及雞翼。 4. 熄火,冚蓋,留一條縫隙浸1小時。 5. 開大火煲滾。 6. 鹵水汁已滾起,熄火,夾起煲內所有食材,攤凍。 7. 放炸豆腐入鹵水汁內,浸約20分鐘。 8. 蒜頭及辣椒,刴碎,放碗內,加入: a. 白醋6湯匙 b. 糖1大湯匙 c. 檸檬汁1個 9. 豆腐已浸好,夾上碟。 10. 砧板及菜刀,放煤氣爐上高溫消毒。 11. 戴上透明膠手套。 12. 豆腐,切一塊塊,放碟內。 13. 雞半翼,放碟邊。 14. 金錢肚,切條,放雞翼旁。 15. 豬耳,切條,放碟邊。 16. 紅腸,斜切一片片,放碟邊。 17. 完成,可享用。 Marinated meat assorted cold dishes Ingredients: Frozen beef honeycomb 12oz Frozen pork ears 1 lb Frozen chicken wings 2 lbs Frozen red marinated sausages 2 Nos. Deep fried tofu 3 cubes Chinese marinade 1 pot Garlics 4 Nos. Chili 3 Nos. Lemon 1 No. Preparation: 1. Heat up a wok of water at high flame. Add in 1 tbsp of cooking salt and 3 tbsp of white wine. 2. Put pork ears, chicken wings and honeycomb, boil in wok. 3. Put the sausages in wok. Defrost at the same time. Heat up at high flame until bubbles arising. Rinse thoroughly. Steps: 1.
