    Looks amazing
    When I do mine, I put the sausage in a 1 gallon ziploc bag. Press it out until spread out side to side and top to bottom. Then just cut the bag open along the seams and place on bacon weave

      @@CowboyKentRollins Jep, Dutchies and Kent work well. One of the reasons i got me a cast iron grillpan. Shitty weather here most of the time so i grill inside with the pan. Love the special sauce and breakfast ideas. Keep it up Kent and Shannon. Best of regards from the Netherlands 2.

    Wetting or spraying the board with water will help the saran wrap stick to the board. That will make the beginning of the process easier.

    i never miss your videos, take your hat off to my mom, who taught me to cook (you refined it) - she would ahve been 78 today. She died when she was 65.

    This is phenomenal, kinda like the Bacon Bomb I make, the outside is exactly the same, just has potatoes (cubed and sautéed, cooled), cream cream cheese, onions, jalapeño peppers and seasoning inside… Now I have the breakfast version! I love sautéed bell peppers and onions, so I am going to try this, with my own twist! But this is phenomenal, and thank you for teaching everyone!

    We smoked10 lbs salmon today, then 4 trays of party mix after. Will have to try this soon. Love the idea of green chilies in the eggs idea. We didn't know about green chilies until seeing you about 7 years ago. Not something we ever heard of in Maine. What a treat!

    I’m from Canada and I saw a video of yours on how to make poutine and I’d loved the it. Something I think you would also like to try is the Halifax Donair. (Something most of us in Canada just call a Donair). It has its origins in Turkey or Greece and I don’t think there is a city in Canada that doesn’t have a place selling them (crazy popular) and has been a thing in Canada for at least forty years. The hardest part of making them would be making the meat which is pretty easy to do. Traditionally, the Donair sauce is made with condensed milk, but because I am diabetic, I use evaporated milk and instead of using vinegar to thicken the condensed milk, I use starch and thicken it that way. With the normal way of making the sauce with condensed milk, you don’t hav to cook it like I do with evaporated milk. There are a few videos on how to make it on UA-cam. Maybe have a look at a few of them and see if it’s something you might be interested in making.

    That looks absolutely amazing! One thought. Skip or substitute the hash brown patties and you wind up with a ton of protein and very few carbs. Good breakfast for us diabetics.

    Kent, if you run a damp rag over your cutting board, just making the surface damp you don't want the water pooled up, the Saran wrap will stick to the board better.

    Been making fatties for 15 years...never made a breakfast one. I have GOT to do this. I use parchment paper instead of the plastic. Makes life MUCH less complicated Mr. Rollins. Also...tighten up that basket weave. it makes it a wonderful presentation and NOBODY complains about the extra bacon.

      @jamesbingham4538 it's time to make great flour tortillas big enough for your liking. I hear you about the size too. Romero's Gordita Tortillas are huge but may be a bit too small for this. Romero's is a kosher California brand in Southern California and not into political correctness. Great tasting tortillas that beat Mission & Guerrero brands.

    I made a number of chubs a few years back, in a variety of flavors and ingredients, some bacon wrapped, mostly with beef as the ground meat.
    It never occurred to me to make a breakfast variety--I'll be doing this soon! Think I might use canned corned beef hash in place of the spam.

    Hey if you can make a lattice top pie, you can make this. 😊
    Only thing i would change is add some kind of spice or acid in there. When you only have fat and salt it can be a little dull. Or maybe mix some chipotle peppers/sauce in the sausage. Of course you could change up whatever flavour bacon to address that problem also. Maybe a very sugary maple bacon or when you serve it, you could prepare a maple syrup based glaze to pour over. It would be fun to try one slice with the sweet syrup and then compare it with another slice covered in a vinegar sauce like tobasco

    When I weave my bacon like that, I usually start in the middle with the second layer. that way I'm only lifting half of the bottom layer pieces at one time. Just work my way both directions!
