First of all, unlike anyone I love bittergourd. Bengali people used to start their meal with a bitter item. Today people are avoiding those vegetables which don't taste good.
I've heard that soaking bittergourd in a mixture of water and vinegar removes bitterness. Is it true?

This will definitely work. But doing so will remove most of the nutrients and also adding too much salt / sugar will defeat the purpose of eating karela. I have realized if you want to eat karela the healthy way, you unfortunately cant make it taste less bitter.

after cooking bitterness cannot be removed. You have work on karela before cooking. You can try adding little lemon juice after cooking, if it helps
