    I like wintermelon + pineapple version more than only pineapple. Wintermelon mellowing the tartness of pineapple. But fully pineapple also good. Just my preference

    Looks so good! Watching you cut and get the pineapple juice made me crave some so much!
    These cakes are so yummy! My dad got me some when he travelled through Taiwan!

      definitely you can. I will do filling first. Pastry is better to do it on the day. If you put too long in the fridge, when you take out, is too hard to shape because is harden

      Yes you can. I tried it before. But it may break little. And of course shape will not look as nice as in the mold.

    Goodness me that is the kind of pastry I can get behind. The restraint it must have taken not to eat all the pineapple paid off in the end lol!
    The packages look elegant. Very nice.

      Hahaha. You better don't eat the pineapple while making it. It is not like egg which you can cook it again easily and quickly 😂😂😂 otherwise, maybe you can only get 5 cakes at the end. Hahaha. With two big pineapple, I only make 29 cakes.

      We have a Chinese shop here that sell all kinds of different baking material, packaging. Otherwise you have to get it from taobao. Not sure if you can find in aliexpress

    Hi Emilee, about the maltose, is it a must or we can change with just add more sugar. And for the almond meal, if we do not use itu, should we add more flour?

      Yes, you can add more flour. Maltose help to set. I did saw people replace with sugar but because I.myself never try it, so I cannot simply say yes or no 🙂

    What is the purpose to flick to the other side when you bake the cake Emily?

      So that both side have colour, more even. Otherwise one side is a bit brownish and the other side is pale

    Is there a replacement for maltose? I can’t find it anywhere 😭 same for rock sugar.

      You can replace both by sugar. But quantity will be different. You need to keep trying. Don't add all at one go. Maltose is a type of sugar but not very sweet.

    May I know what almond meal does to the pastry? I prefer a more crunchy crust so should I omit or include the almond meal?

      Is just the flavour. It won't make it more cruncy. For crunchiness, you should just add egg yolk, no egg white.

    If we follow your recipe, the pastry tastes like almost no sweet. The sweet may come from the filling, but not much from the pastry. There is only 40g of sugar, but a lot of butter and other ingredients.

      Yes. This is what it suppose to be..of course you can edit to suit your taste. The outside should taste buttery
