Yes, you can add more flour. Maltose help to set. I did saw people replace with sugar but because I.myself never try it, so I cannot simply say yes or no 🙂
You can replace both by sugar. But quantity will be different. You need to keep trying. Don't add all at one go. Maltose is a type of sugar but not very sweet.
If we follow your recipe, the pastry tastes like almost no sweet. The sweet may come from the filling, but not much from the pastry. There is only 40g of sugar, but a lot of butter and other ingredients.

So that both side have colour, more even. Otherwise one side is a bit brownish and the other side is pale

Is just the flavour. It won't make it more cruncy. For crunchiness, you should just add egg yolk, no egg white.
