Hello beaurri how did you cover that tear i was curious but you seem to skip the process. I really liked the fact that you choose to show the tear of the first method but how did you smoothe it out?
It’s fairly easy to fix a tear, you can add little bits of fondant afterwards and then smooth over to blend in with main fondant. You wouldn’t even know there was an incident
For the wrap around method, you should cut both side edges at the same time while overlapped. Just one cut. Open the top layer and remove the extra fondant cut from underneath. You will see they line up perfectly when you fold it back in place.
Did your buttercream firm up before you covered it or did you cover a frozen cake ? I live in a very hot climate so chocolate doesn’t work and sometimes buttercream gives me a lot of problems
The last time I used chocolate, it melted under the fondant and my cake dropped. It was a disaster so I have a fear of using it with fondant cakes. Where I live it can be very hot so I try different methods in hopes that something would work .
I’m in South Africa, I use 4:1 white chocolate and 3:1 for dark chocolate. It works perfect for extremely hot days. It’s important for your ganache to set first before covering, for 4-8 hours or best overnight
Even in hot climate chocolate always works. The reason why your chocolate melted was probably because you used too much cream. Always do 1:2. Example if you use 500g of chocolate then go with 250g of cream
I still use the overhead method because its faster. To overcome tearing, I don't roll out the fondant to much so that when gravity happens, there would still be enough fondant thickness to stop it from tearing open.😊

Chocolate always works ,use a ratio of 3parts chocolate and 1part cream .it always works
