Hello Matt, I really do like the Walnut with Popular trim. The contrast of the 2 woods go good with the Brass and Aluminum of the motor. your wood working is great.
Mahogany looks expensive, pine looks cheap. Hickory looks nice but the burn marks on the edges spoil it. I do my routing with the piece clamped down to my mill bed and try to keep the cutter moving. I always find that burn marks are hard to remove by sanding so I try to recut and end up chasing my tail. Mahogany it is for me.

pine looks good, does not distract from the mechanism, not dark and not too light ...
Mahogany works for me , for contrast as the engine is very bright.
