I have an immortal bottle of vanilla that I started about five years ago. Yearly strain out the old beans, add new and top off......with Bourbon. It's the bomb. And I also have a coffee bean extract that is the same age but with Vodka. So worth the effort. Delicious in anything chocolate....cake, brownies, cookies.
My grandparents saved dimes in old mayonnaise jars and saved up enough to buy a new Studebaker in the early 60’s. I have a picture of grandpa in a suit and tie proudly posing next to his new car ❤
I have nearly a year's worth of coffee squirreled away. I subscribe via Amazon and order it faster than I use it. Granted, I don't drink the amount I used to. When I was working I drank pots every day. Now that I am retired I have weaned myself down to 1 cup a day. No withdrawal if you go slowly.
One thing I've noticed about Amazon subscriptions that they fail to tell anyone is that after a year it seems like you're suddenly canceled without any kind of reason. That has happened to me with dog food, dog treats, and other subscriptions that I've just let go because I used on a regular basis. I almost feel like you got a deal and they decide that that You should renew the deal but they don't tell you. You just get canceled! One thing I will say is that I also have a coffee subscription and I've noticed that the price of my coffee is gone down by $3 or $4 which is kind of odd because other sources that I saw said that they expected coffee, Coco, palmoil, and some other things to drastically increase in 2025 and that had nothing to do with political activity. It had to do with the fact that different areas have sustained severe weather crisis is and that was what some of the upheaval was attributed to
I don't even take the vanilla beans out of my vanilla half gallon jar until I can't fit any more in. I just keep straining off and use it. I top it off to keep the beans under the vodka but that's about it. Haha, head slap, you just reminded me I made a bunch of extracts for Christmas gifts and forgot to pkg them and give them. Well, I can tell you the strawberries don't stay pretty. They are kinda orangy brown icky looking but I just sniffed the jar and it's to die for! Happy tasting when yours are done. I might just add some vanilla to the little jars just cause you made me drool at some of yours.
I bought a stainless steel cone for brewing pour over coffee it is funnel shaped and can use filters. Sits right on top of a jar. I use it for straining my tinctures and extracts.
I never had to worry about giving up my coffee as I am well stocked in coffee between prepping and after-Christmas sales. Remember, our founding fathers gave up tea in protest because of the British tax and they then switched to coffee. We can always switch back to tea. ;-) Leisa, I think I would make the extracts in canning jars and then strain them into your cute containers after they finish off. It would make the straining much easier as the solids will slow/clog the straining at the bottleneck.
I use Everclear, and have lemon and orange extracts from the zest. Oh, yeah, took a little nip of the expended orange zest and was glad I wasn't near an open flame 😂
Its just as windy south of you (where we live). I have a half gallon of elderberry tincture/extract and half gallon of mullein infused olive oil that is about ready to strain (next week). I love the Madagascar vanilla beans! Once I get done making my own vanilla extract, I freeze dry the vanilla beans and then stick them in sugar to make vanilla sugar :) Thanks for the ideas on extracts!
I love doing this to get my extracts! I have cinnamon bark, cocoa nibs, coffee ground beans, and vanilla whole beans! I started them may 2022. Yes almost 2 years now! Vanilla beans, when I decant, will be dried out, and then put into white sugar. Oh, these are all quarts. Shake them well at least once a week. Some vodka, vanilla is dark rum( good quality)

I love making extracts and liquors. You can add them to anything, juice, coffee, tea and even ice cream. Also works for adding a new flavor to your baking. Great fun
Funny, I told hubby that when I get my ssn next month, it’s going to go fast, stock , stock, stock! On freeze dried coffee for sure, and I’m making lemmochello today, lemon peels been soaking for a good while, I’ve got lemon, orange, vanilla, bourbon extracts that I’ve made, several bottles of the stuff, also coconut . I found a recipe recently that when you have strawberries and when you cut tops of w green part and you let them steep in white vinegar, you have strawberry vinegar . I’m an ingredient cook in everything I make, I follow canning rules for sure but I need my spices and flavors, that’s a priority! Just got a bunch of different bell peppers for cheap cheap, today they are getting chopped for dehydrator. My poor brain is on overdrive, but stuff is coming down the road, already has begun! Now hubby is on board and goes w me to grocery store getting as much as I can get allowed to prep and stock up. This week the store advertised ramen soup pkg for .9 cent ea, limited 48 ea, yup we went and got them, you know its edible, not the greatest, but it’s still a food, I don’t use the seasoning pkgs, but the noodles to make stir frys and salads ect. There was a lady behind hubby and I making a snyied remark about it to her adult grandson( like I’m not suppose to hear)no comment🤬also a lot of seasonings spices come from over seas, fyi🥰
I’m like you… so many projects going on at once! Bought yarn for a new crocheted afghan as I’m frustrated trying to make my own star pattern on the other afghan…. Pantry inventories are still going strong! I finished the canned seafood section today! Pantry challenge continues to be amazing! TY for all you do!!

One of those gold coffee filters is great for straining extracts. I filled an old glass water jug after five years there was almost 3 grand in it, now I only go half way, change is heavy.
I have a mesh tea thingy I use to strain my bacon grease, and anything else I might need to strain in small batches. A gold coffee filter is a wonderful idea. Thank you.

I dehydrated and powdered radishes today. Yummy in salads. I haven't tried extracts! I don't drink coffee, my imported tea will prolly get hit too. I make wild teas too, but I love Rooibos and China Black. Last year I ordered 2 tea plants, they died immediately. A few coffee growers in southern California, see Rocky Kanaka. Some coffee grinders use Ethiopian beans
I planned to can potatoes this weekend, found a roast on sale and had to buy it. There’s no room in the freezer, so Sat it was quarts of potatoes, Sunday was canning pot roast, today after work was pints of potatoes and onions. I keep saying I’m going to ferment Worcestershire sauce. Have not. I keep four jars of vanilla going year round. We can go thru two jars during the holidays

Four years ago I made my own vanilla with vodka and others with Malibu rum. They are ready now for use. Every year I make some and date it. Then shake once in a while and wait for it to be full strength. Now I see other extracts I could make too.

I have spent the past few days in the kitchen. Its where I go to hide from the world, my happy place. Funny thing is I started 3 extracts as well, coffee, orange & anise. But I keep a full vodka bottle of vanilla going normally. Hadn't thought of chocolate, great idea!

On Dec 6 here in my area in West Wales we had winds up to 120mph thanks to storm Darragh. Still a bit gusty with a second storm over the weekend but much better now. I made my own vanilla extract in the summer for the first time. So cool using it in my baking. I have enough wash powder for a year!😂 Love your work Leisa.x

Thankfully my son is here for my motivation. We're both home for 2 days. Little projects are getting done (one day at a time sweet Jesus). 😊

Leisa, this is a perfect reminder for me to make and put up a bunch of extracts-for myself and for gifts! Last year I made and gave regional jams but I think with the economy being what it is, extracts will be much appreciated! As always thank you!❤ (monkey butter extract, hooray🎉)

Nearly choked on my gnocchi laughing so hard when you told about giving Phil the banana! I also was thinking of those “little “ projects and start out, get distracted, start another, then remember another day to start the process all over again 😂! You see I am ADHD/ OCD with a hyphen! Yes, I make to do lists and notes and then have to set a reminder on my phone to remember what time to do them! Okay, when the reminder goes off I tend to hit it like the snooze button 🤪. Yes, Claire and Charlie have become my fb friends as she is such an inspiration! Love her descriptions of her life with Charlie and being a solo older female I so relate!
