DELICIOUS KNAFEH WITH STEP BY STEP DETAILED RECIPE

  • YOU WILL NEVER REGRET TRYING OUT THIS KNAFEH RECIPE, SO LET'S BEGIN:
    FOR SUGAR SYRUP:
    3 CUPS SUGAR (600g)
    2 CUPS WATER (500 ML)
    1/8 TSP CITRIC ACID
    1/2 TSP ORANGE BLOSSOM WATER
    - 75 g SOFT UNSALTED BUTTER TO GREASE THE PAN.
    FOR KNAFEH:
    450 g KATAIFI DOUGH( I USED THE FROZEN ONE SINCE IT'S THE ONLY ONE AVAILABLE TO ME AND I LET IT THAW OVERNIGHT IN THE FRIDGE.
    600 g FRESH MOZZARELLA CHEESE
    * WHEN PRESSING DOWN THE KATAIFI DOUGH BEFORE BAKING, YOU CAN ALSO USE A POT FILLED WITH WATER SO IT MAKES AN EXTRA WEIGHT.

    Here in Palestine, the provenance of Knafeh, we use unsalted sheep cheese and milk ghee 👨🏻‍🍳

      Yes, you are right. It is unfortunately impossible to find exact knafeh cheese so, we have to find similar kinds to come as close as possible.

      Goat cheese will not melt properly in a knafeh. The best option is Akawi cheese, but it is not found everywhere. That's why mozzarella cheese is a good alternative.

    Is kataifi dough same as vermicelli? And if u cant find kataifi dough what can you use as an alternate?

      Kataifi dough is completely different from vermicelli. Vermicelli is a kind of pasta. Unfortunately, this recipe is only done by kataifi dough. You can search in middle eastern stores or greek stores.

    Should I use baking paper or non stick pan in case it sticks to the pan and I'm unable to flip it over? Or does this kunafa base not stick?

      The generous amount of fat makes the flipping very easy. It will not stick to the pan.

    Hello habibty on which rack of the oven you put the knafeh the first one from down or middle because I don’t want the cheese get dry with me please reply back 🙏💋❤️

      I put it in the middle of the oven😊and make sure your oven is really hot so it doesn't stay very long in there.

    What can I use apart from the citric acid and orange blossom water?

      Citric acid is important to make sure the sugar syrup does not crystallize back.. as for orange blossom water, it is for flavor. If you want you can leave it out, but I highly recommend it.

      In lieu of citric acid you can use corn syrup if you’re okay with that stuff.

    Quick question please? If you put the kunafa in oven. Do you have to flip it once it’s finished or?

      No, it will bake as is in the oven. Once the edges are deep golden color, flip on your serving tray and pour the cold sugar syrup on top. It is explained with details in the video😊

      Usually they use Akkawi cheese and it's the best. But, unfortunately it's not available everywhere. Mozzarella is a good substitute.

    I can’t find any Kayaifi here in the UK, can I use Vermicelli instead?

      I don't recommend using vermicelli, as this will make it a totally different thing. I always buy it from middle eastern stores in the freezer section. It comes in a box of 454g.
