FINALLY a khunafa recipe! For people who have never tried it: It actually tastes reaaaaaally good. You might think the cheese would be salty against the sugar, but if made correctly it is a perfect blend of creamy cheese with crispy kunefa, and a milky flavour with just enough sweetness. It can also be made with cream cheese, so if you're a little sceptical about this you can try it that way too!
I'm glad I tried out this dessert in Istanbul 3 hours before my flight (right before the Covid-19 thing started). Even though it was a shop near the bazaar and probably a little bit of a tourist trap, it still tasted good. Later I almost jumped when I found there's "Kunefe" in Trader Joe's frozen section (US supermarket chain).

I just made this! In fact I’m eating it now as I type with a nice cup of tea. I was skeptical, but WOW! I did add a smidge of sugar to the dough and I only had fresh mozzarella. So I combined it with ricotta. I made individual portions in a muffin tin as this was an experiment for traveling with it. It all worked! I really enjoy your videos.
For a second I thought the orange was saffron. I recently ate this and it is so delicious! can’t get enough, I eat it every week now😅. I’ve been trying Iranian/Turkish/Palestine food lately and am very impressed, everything I have tried has amazing flavor, such beautiful food & traditions! I wish more places cooked this type of food here in Mexico.

I absolutely love künefe and order it everytime as a desert when I’m in a Turkish restaurant! Come to Germany, we have large Turkish grocery stores where you’ll find almost everything that is used in Turkish/Arabic cuisine haha

Haha yeah it can be quite tough, especially when the ingredients are hard to find or common substitutes do not work. For some reason some people make it with ricotta too, but I don't think that is a good replacement at all. Thank you
I love this dish so so so much!! What I use instead of clarified butter (because it’s cheaper where I live) is mascarpone & the cheese I go for is pepperjack because I’m a sucker for the salty/sweet/spicy combo. I go as far as sprinkle just a bit of Malden salt on top with pistachios. Another great thing is if you’re doing it on the stovetop - to pour the simple syrup directly into the hot pan & kunefe, i love the bits of crispies that creates. Thank you for the baking alternative to this recipe!! It shall definitely be useful! Love your channel very much!

Oh my god, I have been looking for an easy to follow recipe for Kunafa for so long. This is perfect. Being in Southeast Asia, sourcing the pastry will be a challenge though, but I'm not kidding when I say that I think Kunafa is easily one of the best desserts in the world.

I had utterly divine knafeh at a bakery in Amman a few years ago, and also a very good one in Ramallah a bit later. As I've not been able to find any quite as good in the Arab markets or restaurants where I live, I'll try my hand at making it myself!

Thanks. The massive block was from Costco, you can get it at any large wholesaler too. Waitrose also have a Galvani low moisture fresh mozzarella which is fantastic. Hope you find them easily.

I am quite sad about how good this video is and how well you explained it. The only thing stopping me from eating Kunafa everyday was the lack of knowledge to make it. Now that you have taught me that so well, I am doomed.
If you want to get the orange color without using dyes you can add a bit of sugar to the dough along with the ghee. The sugar will caramelize and turn golden/orange when cooked.

You can use vermicelli or shredded wheat cereal. You put some butter,milk sugar, on shredded wheat,use rigotta, soft tofu,cottage cheese with honey. Don't use mozarela . Use rose water or,cinamon or orange water or peel, cardomom in sugar syrup.
I will have to try this as it's one of my husband's favorite desserts. Question any chance you could do a video on Za'atar and Manakish? They're a favorite snack food of mine but I haven't been able to make it in a moment
Trader Joe's sells this desert so I tried it. Personally I didn't like it hot, it was much tastier cold. I guess the cheese was less salty so the Sweetness came though better.
Somehow I doubt their kunafa is as good as this, but I'm willing to give them the benefit of the doubt. If you make this, try it hot and see if it's better this time around.
Please don't use Trader Joe's as your reference for what kunafa is supposed to taste like. As a Palestinian this hurts my soul. Fresh kunafa is way better texture wise (cold kunafa is a war crime where im from) and the cheese isn't supposed to be salty at all. I hope you can find a better place that sells it.
Trader Joes brings Middle Eastern food to Americans in the worst way possible. Tried a few things from there when I was in the US - did not like what they were offering. MUCH better getting Middle Eastern food from restaurants that are run by Arabs which are very common in big cities.
I think Trader Joe's is a pretty good company. With certain products they do souce thing from small producers. Some things like their pizza are sourced internationally. Personally I thought it was better cold than hot. I didn't say their version was bad at all.

As long as the mozarella you're using is salty this can work, the charm of the nabulsi kunafa is the contrast between the very sweet syrup top and the salty cheese under, that way the sweetness isn't overwhelming :)

I have made it with mozzarella and ricotta and it is quite good. I am trying it today with mozzarella, rocotta and akkawi.

Finally a truthfull video. Kunefa is an ARAB PALESTINIAN dish. Not turkish or greek.

Oh that's definitely a possibility too! We do it that way with the cream filled konafa.

You can use vermicelli or shredded wheat cereal. You put some butter,milk sugar, on shredded wheat,use rigotta, soft tofu,cottage cheese with honey. Don't use mozarela . Use rose water or,cinamon or orange water or peel, cardomom in sugar syrup.

Yeah at first it seems quite weird, but it's a neutral tasting cheese so it's not cheesy if you catch my drift.

Possibly, but that will give it a saffron flavour, which may or may not be nice.

Trader Joe's sells this desert so I tried it. Personally I didn't like it hot, it was much tastier cold. I guess the cheese was less salty so the Sweetness came though better.
Somehow I doubt their kunafa is as good as this, but I'm willing to give them the benefit of the doubt. If you make this, try it hot and see if it's better this time around.
Please don't use Trader Joe's as your reference for what kunafa is supposed to taste like. As a Palestinian this hurts my soul. Fresh kunafa is way better texture wise (cold kunafa is a war crime where im from) and the cheese isn't supposed to be salty at all. I hope you can find a better place that sells it.
Trader Joes brings Middle Eastern food to Americans in the worst way possible. Tried a few things from there when I was in the US - did not like what they were offering. MUCH better getting Middle Eastern food from restaurants that are run by Arabs which are very common in big cities.
I think Trader Joe's is a pretty good company. With certain products they do souce thing from small producers. Some things like their pizza are sourced internationally.
Personally I thought it was better cold than hot. I didn't say their version was bad at all.

As long as the mozarella you're using is salty this can work, the charm of the nabulsi kunafa is the contrast between the very sweet syrup top and the salty cheese under, that way the sweetness isn't overwhelming :)
