I’m so happy you’re cooking again. I guess it’s because I trust you to have studied healthier foods and easy healthy ways to prepare them. Thanks!
PS I am now eating my first batch of homemade yogurt! So easy and I love knowing I’m not ingesting commercially store bought with who-knows-what additives.

That looks absolutely delicious! And super nutritious, too. Thanks for sharing this recipe. One tip I learned when I started cooking with miso in Japan is that it should never be boiled (or simmered at all, if possible) in order to preserve as much of the nutrients as possible. When I try this recipe, I'll stir in the miso just before adding the eggs:)

I am a Ramen freak! Surprisingly, I never ate them in college...it wasn't until many years later that that I started eating them. Love the texture, and the versatility. I add them to fried cabbage and butter with sausage. (I'm ordering sprouts right now to start growing them to put on this recipe). Thanks.

I had never eaten ramen until I ran across these on Amazon: Big Green organic buckwheat (which I'm sure you know is gluten free with no flavor packets. At five packets per box; it's a bit pricey but it is 100% buckwheat (which used to be hard to find). The only thing is I believe the directions tell you boil them longer than you need to unless you like mushy noodles.

Please try a healthier version of ramen by Lotus Foods-millet and brown rice in several flavors. Great buy at Costco. Does not have the high sodium and msg flavor pack, just add your own flavorings. With meat broths it is great. Hope you try, you’ll never go back😛

I buy miso from South River Miso out of Conway, Mass. They recommend that miso never be boiled because boiling destroys the probiotics created by the fermenting process. Have you hear/read something different?

I bet your starting bone broth is amazing.!! love asian soup.... you can add a dash of allspice and cinnamon & maybe black pepper and grated ginger....if you want more Asian flavor. I agree... I usually rice noodles, but that is because I am gluten free. Sprouts on top is a new inspiration.

I'd never eaten ramen until I roomed with a girl from Thailand when I was in graduate school. She taught me the wonders of ramen, and she always topped it with a couple of tablespoons of cider vinegar. I still do that because it tastes the best. And I always cook it with lots of celery (odd, perhaps, but it is my favorite vegetable). So good!

Yes, I get the taste for something acidic in ramen. I've never tried the vinegar, but I will not make ramen unless I have lemon or lime to add to it.
