    If buttermilk isn't something you regularly use, keeping powdered buttermilk on hand is a great option.

      I've never had it go bad.

    Fun tip: Applesauce is a 1:1 replacement for oil, so if your recipe calls for half a cup of oil, use half a cup of applesauce instead. In your carrot recipe I’d use 3/4 cup oil and 3/4 cup applesauce. Or if a recipe calls for 1/2 cups butter or oil I’d just use a 1/2 cup of applesauce. :)

    To make a quick buttermilk without vinegar/lemon juice just mix a couple tablespoons of plain yogurt or sour cream. It thickens quite nicely and has a better flavor. I learned this from another channel.

    A little sausage patty tip. You can leave the sausage in the packaging and keep it partially frozen. With a sharp knife, slice off rounds as thick as you would like with the package still on. Peel the paper off and you have a round sausage patty. And it keeps you from having to form the patties yourself. Hope that helps! Happy new year!

      Just be sure to give the outer wrapper a good wash before you drag your knife through it and all over the sausage! You have no idea where that packaging has been and who has touched it! 😳😬🤢

    Hi there ! Little tip from a French fan : In France, we cal French toasts "pain perdu", which means "lost bread" and it's because we use the bread that's a bit dry and wouldn't be eaten anyways.. Which means when we soak it, it REALLY absorbs the custard because it's so much drier. And so you can either use dry leftover bread, or toast the bread before soaking it. And because it absorbs so much more custard, it literally melts in your mouth after you cook it ! :)

    Those breads looked so good. Whenever I bake breads like that, I fill one pan, then add nuts to the reaming dough. That way I always have one of each kind of bread with nuts and one without.

    Hey, Becky. Not sure if anybody has posted this tip, but to make those cornbread breakfast bites less crumbly, while you are mixing the batter, add a small amount of oil (avocado, olive, vegetable, or even melted shortening) to the batter and incorporate it. Butter will not work, it must be oil or melted shortening. Depending on how much you make, and your tastes, of course, it shouldn’t take much more than a tablespoon or two of the oil. Only that much, too, as otherwise it won’t work. Secret ingredient my mom taught me when I was growing up making cornbread. Loved this episode! ❤

    Becky- luv ur show from Germany! French toast with Amaretto vs Vanilla and a dash of pumpkin spice, brown sugar vs white sugar. The alcohol burns off while cooking. Using frozen bread works great too!!

      I like mine plain vanilla, but have experimented with almond extract, and adding eggnog to the custard. Both good, but always go back to vanilla. Lots of vanilla! (plus I use oil to 'fry', makes it nice and crispy) Amaretto sounds great, or use almond extract and add a dash of amaretto to your coffee to complement it.

    I was food service manager/cook for a mountain church camp for a few years and when we made french toast we placed bread slices on a sheet tray and poured the custard over the bread and covered with plastic wrap and placed another sheet tray on top to keep slices submerged in custard. Melt butter in top tray, then place bread in butter and bake, flipping when brown.
    Dice leftover toast add cooked sausage and cover with egg and milk and bake a few minutes. Serve with syrup.

      Back in the day..I worked as a camp nurse at a Girl Scout camp. I quickly became aware of a problem in the kitchen. Supply wasn’t meeting the demand of many hungry and often tired girl scouts. I went to our camp director about the problem. She told me to go and talk to the kitchen staff and she would fully back me on what I said to them. So let’s just say we had a come to Jesus meeting! They basically told me that their menus didn’t allow for more food. And I told them that they had a lot of girls leaving the table still hungry. And I was NOT ok with that and to change their menus! They weren’t too happy with me but that night and for the rest of the week, no one left the table hungry again!

    Instead of putting the four quick breads on the same rack, put two on the top and two on the bottom to allow the hot air to circulate more freely to bake more easily. Just remember to switch the bottom pans to the top and the top pans to the bottom.

    Hey Becky, I have started batch/freezer cooking after finding your videos.
    A few months ago I found an oxo timer that can run up to 3 timers at once. It has been extremely helpful when running multiple things in the kitchen like you are doing here. Each one can also count up like a stopwatch and I find that useful when letting dough rise.

    Just found your channel. In Brazil we call that "carrot cake" (we only call bread if it is with biological ferment). We make a topping to those cakes: milk (or water), cocoa powder, butter and sugar. Melt it all together and boil a bit. Delicious, my favorite cake/bread.

    Quick tip for baking soda.If you get the little packets that help keep food fresh and the only thing I can think of off the top of my head is like beef jerky I forgot what the little packets are called but if you keep them and turn around, throw them in you're baking soda, flower, sugar, whatever it helps. Keeping moisture out of your foods. No clumps no sifting. Also works great for like trail mix, nuts whatever you got on hand.

    Bulk sausage/ground chuck…I like to put it between parchment paper & cut it square with a pizza cutter 😎 for sausage patties & burgers. Also, I make a giant meatloaf … I cut some of it up for square meatballs 😁

    In Scotland, when making French toast, we call it eggy bread, we omit the vanilla and cinnamon . Make up eggs and milk with salt n pepper and fry in bacon fat or lard (makes it even crispier) and serve , delish . Just a different version

      Becky I make quick breads all the time. I have 8 mini bread pans and use them all the time. We take out one and withonly the two of us now it's perfect . Having mini loaves in the freezer is also very handy if you want to give a home cooked goodie to a friend.

    I found your channel, through this video. In the new year. The drive towards my cooking and baking is one I want to put focus towards.
    As meal prepartion with love and attentiveness to it all. Even the cleaning as you go. At the end, feeling such relief that the area is clean. And can wind down to enjoy what was made fresh and the days ahead. It is soothing to the mind as well as just the tenderness to the act of making food for family, friends and even strangers.     I make my grandchildren corn dog muffins. Chop up hot dogs, brown them up, place in muffin tins, top with corn muffin mix and bake. Big hit.

      I make these for my kids lunches. I usually keep them individually wrapped in the freezer and they just grab and go… one day hubs grabbed one thinking it was a regular sweet muffins. He was so confused when he bit into hotdogs 😂 now he doesn’t take a muffing without checking if it’s sweet or a corn dog.

    I always cook a pound of sausage at one time. Some is divided into patties and some is left as cooked crumbles for other recipes. My farmer also provides links and I cook all at one time as well. So easy to keep in the freezer and quickly microwave when needed.

    You inspired me to get a CSA (community supported agriculture) subscription again. For anyone that can't do a garden, a CSA is a great way to support your local farms. In the past I felt like I couldn't keep up with all the food I got but you give great, simple ideas for preserving food so I think I can do this. I do have a question about your knives. What do you do to maintain their sharpness? I have a good set but I'm not sure what to do to keep them sharp.

    I mash up my egg shells and put them in my garden. I also make my French toast on a cookie sheet and bake in the oven for about 12 minutes.

    Wonderful recipes I will definitely try. I have been clearing out freezers by making freezer meals for my busy adult children and their families. They've been so appreciative that they can actually get home and supper needs to just be warmed.     Quick breads are basically muffins in a bread pan. They can usually be made either in loaf pans or muffin pans, whichever you prefer. Just in case you wanted even more variety with your recipes 😊

    For the french toast batter, I always mix everything together before I add the milk. Just comes together much easier. I also learned that french toast should really be baked after browning. The custard does not cook in the time it takes to brown and when you bake them afterward they will puff up and really cook the custard. Becky you are so energetic! You inspire me to make more make ahead meals. Thank you!

    My mom makes the best French toast I've ever tasted. Her recipe is like yours but she adds some sugar to the custard. But what takes hers over the top is that while on the griddle, she sprinkles sugar on the uncooked, face up side and when flipped and cooked it forms a crunchy sugar coating, kinda like a creme brulee. Unbelievably good, and it doesn't need anything on top.

    Love the frozen waffles to have on hand for my little grands. When you said the word family I just realized that you now have 2 little feet running all over the house and wanting to get into, well, everything. You enjoy these precious days, keeping up with your little. My oldest is now 50 and wow, the time has gone so swiftly.
