Kochur Loti Shorshe Chingri Diye-a Bengali vegetable delicacy-taro stolon with mustard and prawns

- Kochur loti is something we grew up eating in our Bangal (East Bengali immigrant) household. Even as children we loved the loti's (taro stolon's) meaty texture combined with the pungency of the mustard. Even better if it had prawns in it! It is, in my opinion, one of the tastiest recipes from my thamma's (paternal grandmother's) vast repertoire. I have never eaten a tastier kochur loti dish. We are happy to finally share this with everyone.
❓What exactly is kochur loti ("stolon" in English)? Taro plants propagate through thin runners called stolon that grow horizontally from the plant base. Where the stolon touches the soil, it develops adventitious roots and grows into a new plant.
❓The kochu (taro) plant is believed to be native to East and South East Asia, but is now found all over the world. In Bengal there are many, many varieties of this plant-not all of them are eaten. Of the ones that are eaten some varieties are preferred for their stalks, some for their tubers, some for their stolons. Every part of the plant-leaf, stalk, stolon, tuber, and even the flowers-is eaten. The different varieties of kochu produce different kinds of tubers too-gathi kochu, shola kochu, maan kochu, dudh kochu, ol kochu and so on. They are all unique and are used in different ways in cooking.

Some parts I found very much important in this video. Appreciate you're promoting our Bengali culture at a different level..
1. You're using mustard oil which is very important for body rather than refined oil.
2. Kochur loti is unique in Bengalis. I didn't find any other culture where this is eaten.
3. Batna bata (stone grinding) our grand parents used this tool which mashes the spices at different level. Gives true flavour of the recipe.
4. Using hand (not spoon) for eating

Jaya bhaduri mentioned on navya nanda's podcast, when navya praised your channel, that you use a lot of onion and garlic in everything which is not usual in bengali cooking. Don't know where she got this idea from, she must be confusing you with some other channel. I have watched a lot of your videos and compared them to my mother's recipes and even my great great grandmother, who was from a zamindari family in Bangladesh and even wrote a cookbook, I find your recipes always try to maintain the authenticity of the original recipe, unless a tweak vastly improves the recipe and then too, you offer alternatives.
Please do leave a comment on what the hell navya podcast, correcting this wrong impression of jaya bhaduri's, this podcast is a recent one on all things to do with food and eating, I have forgotten the episode number unfortunately.
Congratulations on getting the shile baata mosala on point! I remember in one of the older videos, you did regret not able to do so! Thank you for brining the nostalgia back with this video. Many of us don't try these recipes due to lack of time and of course ingredients :(

Kochur loti is not widely available at my place but we cook two versions of it -one with sorshe bata niramish and the other with prawns. We blanch slightly the kochur loti but let it cook in the juice of the prawns. We use grated onion and garlic and after adding the loti we let it simmer in its juices and add the juices of the sauted prawns too.

আমার মা এই রান্নাটা করে,পেঁয়াজ, রসুন আর বেগুন ছাড়াই। এবং চিংড়ির মাথা বেটে সেটা চিংড়ির সাথে হালকা ভেজে তুলে রাখে। নামানোর কিছুক্ষন আগে সরষে বাটা আর চিংড়ি যোগ করে। তাহলে চিংড়ি শক্ত হওয়ার বদলে অল্প গলে গিয়ে মশলায় মিশে যায়। স্বাদ বেশি ভালো হয়। আর অবশ্যই কালোজিরে ফোড়ন।

My grandma used to make shutki with loti and it was heavenly.. my mom makes tok chorchori with kochur loti in it and I love it.. its very hard to get loti in the US even though many here eat taro root they are not aware of loti
Sounds amazing. You can look for kochur loti (frozen) in Bangladeshi groceries. I have seen them both in the US and in Europe.

I am from Kerala, land of coconut oil😂, so will it taste hugely difference if coconut oil used instead of mustard.
It will be a Mallu version, certainly different. But both oils lend themselves to the flavour of seafood, I mean fish of any kind. Should be fine ☺️
