Mochar Ghonto 2 ways-with chola & coconut or chingri-Bengali Vegetarian Recipe of Banana Blossoms
Вставка
- Опубліковано 26 кві 2018
- Mocha'r ghonto is special to anyone who has grown up in Bengal. Mocha is the banana blossom. The niramish (vegetarian) mocha'r ghonto with coconut (narkel) and chola (Bengal gram) is loved as much as mocha chingri, garnished with small freshwater prawns. In this video, we show methods of preparing both mocha'r ghonto as well as mocha with chingri. This also includes a very easy, step-by-step guide to cleaning, preparing and cutting mocha. Like any Bengali niramish recipe, this one uses no onion or garlic-the main flavours come from ginger, cumin, ghee and garam masala. Mocha provides a crunchy texture that is a canvas for all these flavours. Give this Bengali recipe of mocha a try. It is not the best looking dish, but once you taste mocha, it will change your life.

RECIPE FOR DAL'ER BORA
-------------------------------------------
1. Soak mosur dal (orange lentils) in water for 30 minutes. Rinse and grind with salt and green chillies using as little water as possible. The grind should be a little coarse to provide boras texture.
2. Heat oil on medium flame. Once hot, drop little dollops of the dal batter into the oil. Deep-fry until the boras are evenly golden in colour.

Not saying out of any Bengali sentiment, but this channel is just crazy good. The sheer precision, the detailing, the videography and editing, the knowledge imparted, the BGMs, and ofcourse, the cooking. It's more like a work of art than mere cooking videos. I can only imagine how much effort must be going into this. All the best.
Can't agree more, really beautiful presentation makes the dish so tempting 😊
Akdomm!
The best part of this recipe is where you teach how to cut the florets. It has always been an enigma. Now I know! Will definitely try and surprise people at home :D
Asadharon

Symphony of cooking.. Art of cutting.. Cultural blending.. Presenting india.. Awesome
It has been legit 2 minutes since I discovered this channel and I am obesssed! These videos is all that I need! 💓💓💓
I have never seen a cooking recipe being explained using flowchart, u drew just how I picture every recepi. I get a sense of 'cleanliness' about your videos. Great work keep it up.
Cutting the florets is the most useful part.. haven't seen such precision in any video.. :)

খাওয়া দাওয়ায় রুচি হারিয়েছে এমন মানুষকে শুধু একবার তোমাদের রেসিপি দেখাতে হবে ব্যাস, ডাক্তার দেখানোর দরকার নেই...🤗🤗
Darun bole6en didivai...
Calyx, pistil ...reminded me of my Botany studying days. 😀 Great video as usual guys.👍🏼💕
Btw, I keep the mocha florets in a bowl of water mixed with a little turmeric powder while the process of removal and cleaning of the florets gets completed . This prevents them from turning blackish .
এক কথায় অসাধারণ। সব থেকে ভালো লাগলো মোচা ছাড়ানো আর কাটার পদ্ধতিটা দেখে।
Exactly the way my mom makes....She always keeps some of the dal er boras separate for me and my sister to have it just like that ....
I love both the veg and the non veg versions.... nostalgic recipe 😍
I love banana flower...we assamese people eat banana flower or blossom with pigeon..tastes sooo good...also with soya chunks potato and bengal gram..
Ooh, we must look up that recipe!
You must try...😊
S DG please share the Assamese recipe. My parents are from Assam but I don't know the Assamese version of this recipe
satabdi deb , nice to here from you that your parents are from assam.. and the recipe of banana flower with pigeon is simpe.. I have seen my mother cook it in a very simple way..
- clean the meat(pigeon) and cut into pieces
-two medium sized potato(peel and cut into half)
- banana flower(discard the outer hard layer and keep the inner part) chop well and put it in water so that it doesn't gets blackened
-Chop one big onion, make a paste of ginger and garlic
- 2 bay leaves, half a teaspoon cumin,2 dry red chillies, black pepper powder, turmeric and salt.,( regarding garam masala or any spices i haven't seen my mother adding any thing of it,she always keeps it simple with ginger-garlic paste and a bit of jeera powder and black pepper powder..)
COOKING METHOD
-Heat mustard oil in a wok..(measures difficult to say as mom always puts oil or any masala seeing the quantity of ingredients)
-Add cumin seeds, let it splutter and then add bay leaves and dry red chillies, saute well
-Add onion slices and saute until golden brown
-Add ginger garlic paste, turmeric and stir a bit and let the masala cook,(or say let the raw smell of onions, garlic and ginger fade)
-Now add the meat and potatoes together, mix it well or coat it well with the masalas
-Fry the meat and potatoes for around 5 minutes in medium high heat.(it may stick to the bottom sometime because of the masalas but try to scrape them)
-Now add the banana flower(throw away the water)
-Add salt according to your taste
-Give it a good mix..let all the ingredients blend well with each other
-You can add a little water at a time if it sticks more.
-Cover it for two minutes, uncover and then again cover until all the ingredients cook well.(keep stiring at regular intervals)
-Now add black pepper powder and switch off the heat
-Serve with rice 😊
Thanks for sharing the recipe!
Such detailed step-by-step instructions is a blessing for a non-bengali like me. I love all your recipes. Thank you. 💖
Before marriage i always use to sit with mom for clearing the florets... so much nostalgia... mocha is love !! My mom use to also make pakora of the inside part which u sliced and added in the whole thing.

This is my grandmother's recipe! I love this dish so much! She learnt it when she stayed in Calcutta. Such a unique and beautiful dish!
In south India we used to take the outer leaves till last and soak the the cut florets in butter milk to prevent turning black.

But the best part that I love about Bong Eats, being a science student myself, is the scientific approach towards cooking-using scientific terms, using precise measurements and usage of graphs (as in your recipe for panchmishali torkari) and the "train route map"... keep up the good work Dada and Didi !!!
Haha. The colour schemes were inspired by train route maps :-)
Super bong eats. Mocha tah darun khete hoyeche nischoi. Keep doing well.
I am bengali, but never eat it.Few months back my husband bought it,I didn't know the cooking process.
I watched your video,it's so easy but at the same time tasty.

Ajker mission- eta banano. Everytime I used to walk past my neighbourhood Sri Lankan greengrocer here in London, I looked at mocha with so much nostalgia, chotobelar maa'r hater rannar kotha mone hoto, my partner who is a ''so called Bengali'' never had mochar ghonto (can you believe it!) and called this beautiful banana blossom 'rocket' at first sight which made me take up the challenge to make it one day and feed him to make him realise what a Bengali delicacy he has been missing throughout his life. In my 10 years of life in London, I never cooked mochar ghonto (I cook almost all Bengali and other Indian food at home all the time) as I didn't know what part of the mocha I need to throw away and what to keep, now I learnt, thanks to you two. Wish me luck today and hopefully I can make it a delicious Bengali dish and show it to my partner what I have been claiming about mochar ghonto.
I guess it's a tad bit late to ask whether he liked it or not
@@horrorripples3332 loved it
Believe me this video is a work of art. So calming in essence. And not to forget the recipe, my mother cooks it in the same way.

Bahh khub sundor😍
