Kumror Doga-Pumpkin Vines With a Medley of Vegetables-Bengali vegetarian recipe

  • The sweet red pumpkin finds its way into Bengali meals in every imaginable form. Pumpkin flowers are, of course, a well known delicacy. Naturally, the pumpkin vine is much loved too. Its stalks are hollow, meaning they can hold flavourful liquids like a penne. The leaves are substantial, with a chewy texture when cooked, unlike spinach, pui (Malabar spinach), or other softer leaves, which lose their crunch completely once cooked.
    This recipe with kumror doga (pumpkin vine) is a beloved family recipe passed on from my great-grandmother. It follows the standard panchmishali torkari format-no spices apart from the initial tempering with nigella-no onion, garlic, or even ginger. A bunch of vegetables just stew gently in their own juices until the whole thing comes together, slightly mushy but all vegetables still holding their shape and flavour.
    What is a bit special here is the addition of coarsely ground lentils-masur dal in this case-that adds flavour and texture. That something with no spices or aromatics apart could taste this complex and layered is the true genius of Bengali cooking.

      Sounds like Bangla food could work wonderfully in fusion with Korean and/or Japanese food, especially given very similar staple uses of seafood, veggies & rice

    Next time you might try adding bori to it. Fry and keep it aside and add it at the last so that it doesn’t become soggy 😊.. cheers!

    Similar kind of dish is made in my home with lau shaak. Kumror pata is not always available

    অনেকের বাড়িতে শাক আর ফল একসাথে রান্না করতে মানা। কুমড়ো শাক এর সাথে কুমড়ো দেওয়া যাবে না। লাউ শাকে লাউ দেয়া বারণ।
    যাই হোক, মুসুর ডাল দেওয়ার concept ভালো লাগল। করে দেখব কেমন হয়ে।😊

    My Didima used to make this and I used to turn my nose up at this dish, along with chochodi, dalna, mudi ghonto, etc. In Pune, I don't eat like this anymore and that brought a tear to my eye after watching this video today. Good work by the Bong Eats team.

    What might be some Bangla takes on such seafood kinds as seaweed, sea urchin & jellyfish that you could fathom, heeding that the middle could be used like butter & the last could be prepped with anything you want?

      A large part of Bengal prefers river fish over sea fish, simply because we are a land crisscrossed by rivers. I love Japanese food but sea weed might be too alien. But sea urchin has a sweeter flavor, so could work.
