- Chicken stew recipe: Chicken stew is a firm favourite among office-goers in Calcutta, especially in the central business district of Dalhousie. Go to Chitta babu’r dokan (shop) on Dacre’s lane at any time of the day and you will find the wooden benches on the sides of the lane filled with workers taking a quick break over stew, buttered toast, and tea. The YMCA canteen in College street on the other hand pulls a younger crowd of mostly university students. If you are looking for a chicken stew in a more relaxed environment, you can amble into Cafe in Bhawanipur later in the evening. They serve a delicious brown stew every day of the week except on Thursdays, when they serve a special white stew. It is the perfect spot for catching up with a friend.
Our chicken stew recipe is loosely based on the mutton white stew recipe that we came across in Renuka Debi Choudhurani’s "Rakamari Amish Ranna". We have also added elements from the different stews that we like in the city. Give this a try while the vegetables are in season!

Why do you blanch the chicken before actually cooking it along with the vegetables and aromatics?
That's a standard step any time you want a clear stock or want your dish to turn out white. The blanching dislodges the blood and other impurities and they float on the surface as scum which is washed away. This step does nothing for the taste, it is just for a better looking end result. If you go back and see our momo soup video made with pork bones, we had done something similar.

@@gp9166 It does not since you are only doing this step for a short time of about 5 minutes or so. It is a common practice to make a clear stock of any meat.

Then again, that chicken stew was my once or twice a week treat back in those days for Rs. 5/- that included a chicken leg, beans, a piece of carrot, papaya and a potato with a side of toasted bread. What more can you ask for a *foodgasm*?
The day ended with tasting various types of chops, esp. mocha r chop from *Kalika* and 'bhaanr e chaa' after classes were over at Presidency.
Although I don't live in Calcutta or even in India any more, those are my fond and cherished memories that I keep close to my heart. Without them I am not complete.

ব্রেড এ মাখন লাগানোর আওয়াজ টা দারুন। ভাই তোমাদের রান্নাঘরের বাসন গুলো প্রাণে ধরে গেছে। পীলার টা খুব সুন্দর। আমি পুনে তে থাকি। ওই যে তোমাদের বেতের ছোটো ঝুড়ি টা, হামানদিস্তা টি, নুন মরিচ ছড়ানোর ধরন বাপের বাড়ীর কথা, ঠাকুমা- দিদিমার কথা মনে করায়। দু বছর ধরেই দেখি তোমাদের রান্না। পুজো স্পেশাল ই হোক বা এমনি আপলোড- আমার কাছে পুরাটা নস্টালজিয়া।
মোগলাই, রোল, কাটলেট, ফিশ ফ্রাই, বিরিয়ানী পুজোর স্মৃতি। চুরমুর, বেগুনি, ভেজিটেবল চপ, ফুচকা, ঝাল মুড়ি যেনো কলেজ ফেরত বা টিউশন থেকে ফেরার কথা মনে করায়।
আর যা শুক্ত, মাছ , মাংস , আমিষ নিরামিষ পদ সেই সব তো মা, পিসি, দিদা, ঠাম্মা, কাকী, জেঠিমাদের কথা মনে করায়। কারুর এইটা তো কারুর ঐটা ছিল দারুন।
রধাবলাভি বা আলুর দম যেনো বাজার করতে গিয়ে মিষ্টির দোকান থেকে বাবা এনেছে ঠঙ্গায়ে ভরে। পিঠে, মিষ্টি যেনো শীত কালে নলেন গুরের গন্ধে পাগল করা গন্ধ । তোমাদের রান্না যেনো ভাই আমাকে আমার কলকাতা তে ফিরিয়ে দেয় বারবার । আরো বাঙালি রেসিপি দিও অনেক কিছু। অপেক্ষা তে থাকি। তোমাদের জন্যে অনেক আন্তরিক ভালোবাসা ও বেস্ট উইশেস।
মাছের ডিম এর বড়া, কুমড়ো ফুল এর বড়া, বকফুল ভাজা, পাট পাতা ভাজা। বড়ি দেওয়া শিখতে পারবো যদি রেসিপি টা দেখিয়ে দাও। এগ তড়কা দিয়েছে কিন্তু রুমালি রুটি টা বানাই কি করে? আরো কিছু পুরনো দিনের সাগ চচ্চড়ি বা ওই কঠালের বীজ বা চই বা ওরম রেসিপি যদি জানা থাকে দিও। ওই যে যিনি খেতে ও রান্না করতে ভালোবাসতেন ওনার রেসিপি থেকে কিছু জানা থাকলে।
মুরীঘন্ট বা পাতা বাটা, ওল বাটা, কচু বাটা বা এইসব দিয়ে কিছু জানা থাকলে দিও

Just one small hiccup - only if the measurements of the ingredients and spices are shared in units of teaspoons/tablespoons/cups/pieces etc. it would be much easier to follow and recreate.
