    INGREDIENTS
    200g wholemeal pasta w/ water salt oil
    oil
    2 cloves garlic chopped finely
    2 red onions chopped into half moons
    handful of shitakes
    100g cashew nuts soaked for 5 minutes
    300 ml soy/non-dairy milk
    a good pinch of nutritional yeast
    1.5 tbsp tamari-based liquid smoke or 2 tbsp tamari + some smoked paprika
    1 tsp salt
    vegan cheese / nutritional yeast
    basil (optional)

    I suggest starting with the onions then adding garlic. Garlic burns very quickly!

    Wow everyone needs to try this dish! It's hands down the most tasty/flavorful vegan pasta dish I've had thus far, especially considering it took no longer then ten minutes to cook! Thanks boys, better than dairy carbonara, 10/10

    I ❤❤❤❤ this recipe!!!! It had such Amazing flavor with the liquid smoke!!!👌 I also added twice as much garlic cloves- I ❤ garlic! The basil really added a great unexpected flavor as well!!! Thank You!!!

    I made these with quick home made sesame milk. Just add 50 grams sesame seeds to 200 ml water and blend. I made 4 portions, so you can go easier on the sesame if you need less. The recipe becomes significantly fattier, so I just skipped the oil and water "fried" the garlic and onions. It came out delish. Honestly I missed carbonara among the most since moving to veganism, but this recipe is just awesome and makes for a good replacement!

    I’ve tried all kinds of vegan cream sauces and I find a combo of cauliflower and cashews is the best although i suppose it couldn’t be done in 5 minutes because the cauliflower needs to be steamed or boiled first.

    Instead of liquid smoke I use a splash of peaty whisky. It's a lot cheaper in the end, and I think more flavorful.

    I think you could totally use firm tofu instead of cashews. I know the cashews taste better, but I'm going with what I have. Thanks for the recipe and you better believe I'm going to put a bunch of basil in this. I also cannot wait to buy your book. Your recipes have helped me so much in transitioning to a vegan. I thank you. You guys have made me a lot healthier.

    hi, what type of cookware do you recommend? Stainless steel, heavy duty aluminum, other, and the non stick or? I only have a few aluminum and need to switch as almost everything burns fast. Thanks!

    Hi, I am trying to transition from a heavily animal based diet to a vegan diet. I am absolutely loving your channel for inspiration and the ease, simplicity and deliciousness of the meals that you make. I love carbonara and the only dairy-free carbonara sauce that I've found so far, contains pieces of bacon! So I will definitely be trying to make your version of carbonara! Also could you tell me if your new book is vegan? I see that is says "veggie food" on the cover but doesn't specify vegan...?

    This recipe is the real thing. It was brought to Lazio from Umbria by coal men (carbonari), who came to sell charcoal to the Romans. Since then it has been adopted by the Romans and is famous worldwide.
    Cook the pasta in a large pan of boiling salted water until al dente.
    Ever wondered how to make the traditional carbonara sauce without all that nasty cream and fake sauce? Italians never use cream, milk or any such thing in their carbonara
    Ingredients to use for 2 people: - 90/100 gr of Guanciale or Pancetta - 3 Eggs - 80 gr Pecorino Romano (cheese) - 1/2 tsp Black Pepper - 1/2 tsp Salt - 200 gr Spaghetti So simple! Isn't it?

    ok i'm italian so i'll tell you how to do a 5 minute vegan carbonara, carbonara is only eggs, guanciale, black pepper, salt STOP so for a vegan carbonara you can use tofu+ vegan cream for the creamy consistency and smoked tofu for the guanciale, add a bit of tumeric and black pepper to the cream and stop, that's it!

    Heads-up, folks - if you're using the kind of liquid smoke that's made from actual smoke, use a LOT less of it. We've just found that half a teaspoon (2.5mL) is a bit much, and that's still like a twelfth of what the recipe calls for.
    Still tasted amazing though, just a bit stronger than we'd normally go for.

      defo wouldn't have as good a flavour, but it would work. shitake mushrooms have a very distinct flavour, if you've ever tried them, they aren't like any other mushroom!

      Thomas Richardson - Thanks a lot Thomas. I love Shitake, but it’s hard to find stuff where I live at moment.. we kind of need to adapt haha.. anyway I’m enjoying use portobello mushroom in different ways now.. very taste too :) I might try it soon and leave a comment here!
